What are some examples of roles where an actress far exceeded her actual draft value? 

Kelly Mcgylis in top gun would be a great example.

I would say that Bridget Moynahan looked absurdly hot in Coyote Ugly and has never duplicated such a level. 

 
I know its generational, but i never got the knuckle-biting for either Natalie Portman or Emma Watson after their franchise flicks.

Speaking of Star Wars, Princess Leia was a str8up very unlikely source of so many baby boners

I think the underwater bikini footage of Alba in Into the Blue is in another stratosphere to anything else she has done.

Katherine Keener in Being John Malkovich.

Love her so hard but she's not all that hot.  Was super sexy in that movie, though.

Also hot with Anne Heche in Walking and Talking.  Heche could hot up for an otherwise austere woman.  IMO.

Sigourney Weaver in The Ice Storm.  Wowzers.  Not attractive to me in other roles, but boy...she flipped a switch in that underrated gem of a film.

This isn't exactly what I think we're looking for, but both Jennifer Love Hewitt in Heartbreakers and Elisha Cuthbert in Girl Next Door went from whatever lofty number you have them at to completely breaking any ranking scale.

 
As I was just watching The Fabulous Baker Boys for the 1989 poll, I think Michelle Pfeiffer there (particularly the scene where she sings Makin' Whoopee) could qualify.

100% sure she's the reason anyone watched that movie more than once.  Multiple actors should thank her for launching their acting career by being the biggest success factor of that movie.

Macy, Hoffman even Burt Reynolds were all fantastic in that movie.
