My go-to is my Almost Famous Queso.  If you're looking for something super easy and will knock your Super Bowl partymates' socks off, this is for you.

Ingredients:

1 1/2 "bricks" of Velveeta (the 32 oz. size)

2 cans of chili (no beans - 15 oz. can... prefer Wolf but Hormel OK)

2 cans of Ro-Tel (original - 10 oz. can)

1 "brick" of cream cheese (8 oz)

1/2 pound chorizo

Bacon salt

Directions:

1.  Cube up the Velveeta and cream cheeses and pop into your crock pot

2.  Drain out most of the liquid from the Ro-Tel and add to the cheeses

3.  Mix in the chili

4.  Brown chorizo and then mix that deliciousness in

5.  Season with some bacon salt

6.  Let cook in the crock pot for at least 90 minutes, stir regularly

Eat with tortilla chips or slather on sandwiches or whatever you want.

What's everyone else making?

Going to be a long day in the kitchen.

Got up early and made ham/cheese soufflés for my kids.

Made buffalo chicken pinwheel sandwiches, cheese and crackers tray done. turkey sliders ready. I bought a fruit tray. The chicken wings are going in the crock pot here in an hour. Going to make these cheesy tater tot things in my muffin pans. I am going to try to make that Nashville Hot Dip that they have on SI's  front page.  Need to make guac still and a batch of brownies. I know a lot of work and food to just feed four people, but we will have a nice leftover meal later on this week and my wife and kids love this day mainly for the food.

And I still need to make a beer run. :wall:

We're doing Oklahoma quesadillas today. It's two tortillas with cheese in the middle and you can include things like chick, steak or vegetables. Sour cream, salsa and guacamole on the side. They are excellent. Going with Peroni today. I like to have my first beer four hours from kickoff so a little way to go on that.

The conventional way to try to ruin a thread is by posting recipes. If that actually works, I expect this thread to be truly terrible.

"DAMN GOOD CHILI"

2 lb. ground round
1 lg. onion, chopped
1 green pepper, chopped
1 (8 oz.) can tomato sauce
1 (8 oz.) can water
1 tbsp. chili powder (add more to make hotter)
1/4 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. oregano
1 tsp. ground cumin
2 cloves garlic, finely chopped
1 tsp. salt
1 (16 oz.) can kidney beans, undrained

Brown meat and onion; add the rest. Let cook on low or medium heat several hours. (I use tomato juice and no water.)

Some smoked chicken wings and some shrimp on the Weber Kettle.

The wife is making some homemade Cornbread. Not sure her recipe exactly but it's pretty good and will go well with the chili.

For the first time in the history of me making my queso, i left with an empty crock pot.  I f'ed up by draining off most of the juice from the chorizo. Wasn't as spicy as last year.

Hope y'all enjoyed the game.
