Well the actual quote from tartikoff was "too New York, too Jewish" from the Wikipedia so to answer your question, if a network exec said "too southern, too Protestant" I would imagine there might be more a bit more rancor.

1. Jews make up less than 20% of the population of New York City these days so they are hardly the defining demographic of "New York Values".
2. You'd be hard pressed to find a more pro-Israel member of either political party. It's certainly not Hillary Clinton.

What exactly should be considered negative or derogatory about what Cruz was insinuating? He said something to the effect that NY values are socially liberal, pro-abortion, pro-gay marriage, focused around money and media. Is this something that is supposed to be offensive? Stupid generalization, yes. Some anti-semitic code seems like a bit of a stretch.
IMO the part where these guys use being "liberal" as some punchline in their speeches is annoying but whatever.
