Thanksgiving Sides (1 Viewer)

Thanksgiving is my favorite holiday.  I typically prepare everything.  We spend it with my side of the family and my parents get somewhat traditional. So, mom always requests:

My dressing/stuffing: dried cherries, apricots, mild italian sausage.. use either kirsch or apricot brandy

Roasted apple/butternut squash soup, with sage crème fraiche

pan seared brussels sprouts: lardon, caramelized apples and onions, sherry vinaigrette

maple mashed sweet potatoes with streusel topping

Yorkshire pudding

Edit:  

Cranberries: OJ, dark rum, vanilla, br sugar, cinnamon sticks...reduce

Mrs is making a pumpkin chiffon pie

This year, we're doing the Joel Robuchon mashed potatoes, which seem to be mostly butter and whole milk.  Sounds good to me.  

A staple every year for us is the Artichoke Bacon Tart.  

You get a pie shell and fill it with a cooked mixture of chopped artichoke hearts, onions, garlic, cream, and bacon.  Pour it into the shell and top with about a half inch layer of grated Parmigiana Reggiano and some lemon juice and pop it in the oven.  Probably my favorite side dish of all time.  Totally worth being unable to #### for the next two days or so.  

This year we skipped the soup as a starter and instead will be having my homemade beef and spinach ravioli.  

This is the best time of year.

 
me Ma always insisted on having those jarred pearl onions with holiday dinners, but was the only one of the family who liked em. last yr was our first Thanksgiving without her, so we were glad to eliminate them but wanted an onion-y element. so i stole my TV food mentor's recipe for scallion gratin and it cooked in the convection oven next to the green bean casserole and everyone liked it. we've had it several times as a regular dinner side since.

Doing a loaded mashed potatoes side for something different this year. 
Do you have a recipe for this?  Usually do mashed potatoes, and with gravy they are awesome, but I always like to upgrade when its actually an upgrade.

Keeping it simple with shredded cheddar cheese, bacon, chives, and sour cream. Maybe French fried onions too.

my method for basic mashed potatoes:

peel and cube potatoes

boil until tender

while potatoes are cooking, scald cream (or 1/2 and 1/2, or milk... whichever you are using and melt butter)

when potatoes are ready, pass through ricer (food mill)

add butter/cream mixture

season

enhancers:

truffle oil (or other infused oils)

smoked salt

chive (or green onion)

bacon

crème fraiche

Crisp shallot or garlic
