Christmas Eve is here! I'm going with a taco salad and my trusty meatball recipe. :wub:

Try it, you won't be disappointed.

Have a big regular pot or crock pot of sauce simmering before you start making meatballs.

This recipe makes 12 decent-sized meatballs.

1 lb. Ground Chuck (preferably), or lean ground beef

2 large HOT Italian sausages… squeeze contents of casing in with the beef

1 tsp. Garlic

1 egg

1 teaspoon dried oregano

½ cup parmesan cheese

¼ cup bread crumbs

¼ tsp. Salt

¼ tsp. Pepper

Preheat oven to 325º

Place meatballs on cookie sheet for 6 minutes.

Turn them over for another 6 minutes on the other side.

Place the meatballs in the sauce, and simmer for *AT LEAST* 3 hours.

If you can simmer them in a crock pot for six hours, that would be ideal.

I also slice up a couple sticks of quality pepperoni and let it simmer in the sauce.
 
I try to keep my football watching eating fresh and interesting by preparing a dish that represents that week's opponent. For instance, if my team is playing the Bills, I'll make Buffalo wings. If my team is playing the Jets, I'll prepare New York strip. And so on. For Monday's Pats game I'll be cooking up some dolphin.

Making some Texas Smoked Brisket and Smoked Spare Ribs...

Meatball recipe looks good, will have to give that a try.

 
Last year I would have said burgers, ribs, wings, chili, you name it. This year and 70 lbs lighter, it will be a lighter snack :)

 
Biscuit Tacos and Spinach Artichoke dip with Pita bread.

Biscuit tacos are made using Pillsbury or equivalent premade biscuits in the little container, spread out a biscuit on a cooking sheet, put some ground beef thats been cooked in taco seasoning on the flattened biscuit, put some of your favorite shredded cheese on top of the meat, add whatever solid toppings you (I prefer beans and some cut up pepperoncini) place a second biscuit over the top of the filling and flatten the edges with a fork to seal it, repeat for however many you want bake at 400f until the biscuits are golden (about 10 minutes), be amazed.

What's the sauce?
I grab stuff in the cans and make it from scratch. Funny, I've never really had to put it in writing.Lemme see... Some stewed tomatoes, tomato paste to keep it thick, various spices and a couple jars of Hunts sauce.

The sauce isn't as important to me as it would be serving it over pasta. These meatballs are for sammiches on torpedo rolls.

 
Some ribs and fatties on the smoker along with shrimp and crab cakes. Its always easier to watch the Queens lose with a belly full of pork, seafood and jagermeister.

 
Pulled pork in the oven for 10 hours with an asian style sauce. Roasted red potatoes and some Sierra Nevada tomorrow. Always a fun day.

 
1. Buffalo Sauce.

2. Chicken Breasts

3. Simmer in crockpot until chicken is nice and tender (I go a few hours at least)

4. Pull all chicken out and pull it apart with a fork.

5. Put back in crockpot to absorb more delicious buffalo flavor.

6. Pull out when ready. Serve sandwiches.

How about sharing the recipe for the asian style sauce? Got any hoisin in it?

Mostly plum sauce with soy sauce.(like 4 to 5 to 1) A little rice wine vinegar and a bit of sesame oil. Also a bit of dried ginger powder and garlic. Good stuff. I top sandwiches with some diced red cabbage.
