Maybe because fantasy lineups in most leagues mirror the NFL, in which teams do not start two QBs. Yes, in a fantasy league you can make any silly rule you want, but some of us like leagues that are closer to the real world and for us starting two QBs a week doesn't cut it. But, it is a personal preference and if people want leagues that start two (or more) QBs, the more power to them.
Do you dress up in a uniform with full pads on game day?
Ummm...football coaches/owners don't wear pads and uniforms on game day - this aint baseball brohan. YWIA.
But you wear a headset AMIRIGHT?

 
Try a 2 QB league because it might be fun. That's the only reason to do it. It's not any more or less "real". It adds another wrinkle. That's all.

I think it's fun, for what that's worth.

 
It's about balancing the value of positions. In baseball, where every player puts up the same categories of stats, standard fantasy rosters do a pretty good job of making it so that players throughout the draft, from top to bottom, could come from any position. Fantasy football has always been a mess in that regard, with RBs overwhelmingly coming off first and K and D being afterthoughts. Terrible game design. PPR is a way to try to balance that, but it doesn't work so well. Changing roster requirements (e.g. 3 WRs) is another way to try to do that. Adding a starting QB helps balance QBs against other positions. Fundamentally, that's what all these rules are about. None of them work all that well, though: FF is still pretty much a disaster in that regard. People don't seem to mind so much, though.
