Dark meat makes better soup. More fat, more flavor in the broth.
Dark meat is superior in every way, we just use the white stuff where the difference isn't as large.Plus, I use the carcass for broth.
I use the carcass the same way. Boil it for 3 hours or so with some carrots, celery, onions, and bay leaves, and you get a hell of a good broth.

Fried....white.

Breast stays juicy when fried, and I really don't like maneuvering around the bones in thighs.

I love some boneless thighs though. I can't believe they are so much cheaper than breasts. Other than for grilled chicken salads, I use them for most grilled applications where most would go with breast.

Grilled thighs make amazing tacos.

Speaking of chicken tacos, I absolutely loathe shredded chicken breast. There are many many cuts of meat that are great shredded, but chicken breast is not one of them. You can drown it in all the sauce you like but it still won't cover up the fact that you over cooked a piece of meat that gets really dry when it's over cooked. And god knows how long it continues to over cook simmering in sauce.

It's like eating chicken flavored rubber bands.

Sorry to burst your bubble, but, yeah.... It's not a taco without red taco sauce and well that's just nasty on non red meat.

I like these suggestions. I may have to drop some recipes to my turkey preparers. MIL did a pork roast on Christmas eve. Not a good experience either. I'm going to try a prime rib for new years day , and see if I can cook something that will be a good alternative for next year. Maybe smoke a turkey see how that goes. I have to do something to make sure these turkeys don't die in vain.
She probably did a pork loin. THey are extremely difficult to cook well. Next time get a shoulder (picnic/boston butt) or fresh ham (really the butt). Those are about impossible to #### up if you can manage to get them into the oven,.
