What's the best store bought flour tortilla.....I know this will differ by regions, but I freaking love a good tortilla. Best restaurant tortilla is Lupe Tortilla in TX. Obviously freshly homemade is best, but that ain't gonna happen all the time.

 
Here in Phoenix, I'll either go to Carolina's and buy some of theirs or go to a Food City with a tortilleria on site and get theirs.

I LOVE LOVE LOVE fresh flour tortillas, but what is available in my local grocery stores and "authentic" restaurants is similar to soft tree bark. In other words. I scoff at most selections.

That said, when I do break down in Kroger, I prefer the chemical-synthetic Aztec offering. Mission's 230 calorie jalapeno-cheese offering, and plain old Old El Paso varieties occasionally make it into the rotation too.

A taqueria will probably have a commercial machine rolling and cooking quantity. Also this thread is about store bought, in which case I agree with Trader Joe's for traditional but usually buy Alvarado Street (sprouted flour healthy whatever).

Making them at home is simple and something I do maybe once a month. 3 cups of flour, pinch of salt, 1/3rd a cup of fat, about a cup of warm water -- mix to the right consistency. Roll into balls. Press with something like these.

We must be long lost brothers. I do the exact same.Fry's sells a brand called la la's ( I think). They are amazingly excellent.

Traditionally it's lard. I use it. They turn out perfect. But I also might use a 50-50 blend of olive and coconut oils. I've had good luck with bacon fat too. Plenty of restaurants use the cheapest veggie oil they can find, usually soybean. Fat free turn out okay too. I just ditch the fat and use 1/3rd cup fat free milk or plain yogurt.

We actually use wooden presses: https://www.google.com/#q=wooden+tortilla+press. Make up the batter and prep some in advance but mostly to order, particularly since some may be tacos, others pupusas, or huaraches, empanadas...it's the same basic dough with different preparations and fillings, and we prefer using oil.

eta: everything is developing at this point. Got a mobile kitchen, anchored in place in hopes of moving to brick & mortar when the time is right. From there it could go in any direction!

Gotcha...a quick google suggest that lupe uses lard as well :thumbup:

I'll have to check those out, too then. I think you and I always pimp Four Peaks, too, whenever anyone says they're coming out here.

I like Guerrero's pretty well. They certainly aren't as fresh as the ones from the tortilla machine at Central Market, but since I don't live in Texas any more, I gotta make do. Sometimes I can find them where they are fresh enough to be quite soft cold. They almost always are very nice after being heated up a little. I like the 8" ones for large soft tacos.

I also like the Corn & Wheat blend tortillas from Trader Joe's, for smaller tacos.
