Chilaquiles appreciation thread (1 Viewer)

I've loved Mexican food all my life. I've eaten literally millions of tacos, burritos, rellenos, enchiladas, quesadillas and chimichangas. How this most perfect of all the Mexican dishes has eluded me, I know not. But I may never order anything else again.

 
salsa verde

chips should soft but still have some crunch

eggs = over easy

rice/beans

chopped raw onions

sour creme

 
great for a hangover.

So good for a hangover! Love both, verde right now, but will switch back to rojo eventually.

I was working in Monterrey on a year long project a few years back and went to Puerto Vallarta for a long weekend. Well I drank a whole lot of tequila and beer every night and the resort I was staying at had this amazing item on the buffet every morning. It helped sweat out my alcohol and get me ready for the day. I loved it so much when I got back to Monterrey I described it to one of the guys and asked him what it was. I've eaten it every chance I could since then, but not many places in America do it quite like in Mexico. My favorite of all!

I think you're thinking of queso fresco. Excellent stuff.

I watch the Rick Bayliss cooking show on PBS a little because he's always doing mexican food. Like his style, can't believe he's related to Skip.

 
Fancy brunch place in atlanta makes them with a chorizo salsa verde and a poached egg on top. Plus everything else. It is the bomb.
