OK, if you actually dig into the deep settings and find it manually, it works fine (and probably looks a bit better tbqh), the quick style variation button available on every page is broken though

Not for me. I get an error.

ETA: going into settings and changing it works. The quick change at the top of the page does not.

As some folks have mentioned above, if the dark mode/light mode switching isn't working for you, go to the Preferences link below. The second dropdown on the page is labeled "Style Variation". You can choose your setting there:

• System follows your device's light mode/dark mode settings
• Light sets your account to light mode wherever you're logged in
• Dark sets your account to dark mode wherever you're logged in

It was orange, which I’d gotten quite used to. I loved my dark mode with orange. This is fine, by the way. No complaints.

Sounds like your editor is in Markdown Mode. there's a button on the right of the editor toolbar that looks like a pair of square brackets: [ ]
Click that and you'll toggle to rich-text mode and the editor buttons will start working again.
