No chance they spent all that time showing Gendry's travels for him to not be important in some fashion
There have been at least a dozen people we know as well as Gendry who have fallen off the face of Westeros too, I doubt everyone is important.
Such as?

Not doubting you, but I can't recall anyone that was featured as prominently as him.
Thoros and Dondarrion, and in particular their relationship to the magic of the Lord of Light was a pretty important piece of the Third Season.

Robert (and Stannis and Renly) had a grandmother that was a Targaryen.

This is part of the reason Ned declined the iron throne, because Robert had a better claim because he had Targ blood in his lineage.

This link is to Robert's family tree.

Yeah, I would think someone with a flaming sword and the ability to resurrect people might come in handy.

If gendry was the guy rowing the boat when did he become a man of the nights watch?
Well, if it was him, he must have mad rowing skills as he's been rowing for 4 months or so.

eta: There's no way Gendry would be able to gather a strong backing. There are very few remaining who were involved in his move away from King's Landing. Other than his physical appearance, how would they successfully be able to convince people that he had any relation to his father. I can see someone trying to use him as a figurehead, but not to the point where they could convince enough people to support his claims.

This is in the show?
Its his lineage, do not recall if it is mentioned on the show but his family tree is canon nonetheless.

This may have come up in a conversation between Cersei and Ned in the capital, but do not have those exact quotes.

things that went missing.

The greyjoys

The brotherhood w/o banners

The Freys

Gendry

Bran

Rickon

Who else is out there?
The Blackfish is still pissing on a tree outside the Frey's Castle.
Who?
Cat Stark's Uncle...the guy who shot the arrow that flamed the boat of her dead dad after her brother (the guy who got married to the Frey girl) missed three times. He left the Red Wedding right before the #### went down because he had to piss....and it was mentioned later that he didn't get got and was still alive.

I haven't bought Mellisandre's stuff about Stannis being the chosen leader of the Lord of Light. It all was very contrived, her having him pull the sword out of the flames to meet the prophecy/gospel/whatever. Stannis even just sort of gave up the sword to a servant then like it was nothing he cared about. I took that to be foreshadowing from the director that it wasn't the real event.

Looked up the quotes from the show:

According to prophecy, the Prince That Was Promised would be reborn "amidst salt and smoke"[3] and pull a flaming sword from the flames, Lightbringer, to combat the coming darkness.[4]
Didn't we just watch this happen?
Nah, didn't pull a flaming sword out of the flames. Picked up two non-flaming swords off the ground.

This is the same way it has worked historically in real life. That's why when someone usurps the thrown (both in real life and in the show with the Targaryens) they slaughter the ex-king's entire family and everyone connected to it. Not just the next in line. Random 2nd cousins and great uncles get cut down too because even their borderline connection to the throne could be a threat if they get the right backer.
So, is this whole story an allegory? If so, which global countries do the houses represent and who is who? I'm going to predict that the real battle is still Littlefinger vs. Varys. Littlefinger gets the South and leaves the north to the Wildings while Varys goes across the narrow sea and rules where Dany is now. Game ends with the houses losing power and power being consolidated into people that had no power before. Thus, democracy is born.
I had dibs on the French Revolution theory like pages ago, TYVM.

I thought I read somewhere that Martin got the inspiration from the War of the Roses.
