The Chianti salami and spicy sopressa found in The Italian, one of the newest additions to the Panera menu, are made in the old ways by Volpi Foods, a St. Louis company known for its handcrafted meats and its long history of making Italian-style salumi.

The process begins with ground pork, fat and spices that is encased and hung to dry, then age for anywhere between 4–8 weeks in rooms specially monitored to maintain a specific temperature and humidity. During the drying process, mold grows on the outside of the meat—but before you cringe, this mold plays a very important role.

As the meat dries, moisture moves to the surface and mold grows, covering the outside of the sausage. This mold continues to absorb some of the remaining moisture, while protecting it from photo-oxidation and preventing the fat inside from going bad. Once the process is complete, the mold is removed and you’re left with a unique and savory flavor.

Spicy Hot Sopressa, a type of salame, originated in Northern Italy and is named because it is uniquely seasoned with Calabrian spices, and air-dried—an action that removes pockets of air and moisture and intensifies the meat’s flavor. Its coarse grind of pork gives it a unique texture and appearance as well.

What all the meats on The Italian sandwich have in common is that they adhere to Panera’s clean standards and are made with no artificial preservatives, sweeteners, flavors or colors from artificial sources, so you can feel good about every savory bite.

I was thinking more in terms of reverence towards creating and slowly savoring and appreciating a finely crafted sandwich.

Shuke treats sandwiches like a wolverine treats a house cat.

Yeah, but he left Chicago for ####### Phoenix, the most plain vanilla city in the country.  Portland is home of hipsters, funksters, foodies and freaks who are very snobbish about what goes into their bodies.  Hell, even our heroin is organic.

Congratulations on living with a bunch of people who wait for the next day's rain to shower.  There's nothing worthwhile here.  Stay away.

 
I can and do.  Just figured the rest of you probably can't.  I'm out running around a lot so nice to be able to get a decent salad and sandwich quickly. 
Can you start shipping choc chip concretes from Ted's and cannoli from Missouri Baking to AJ's Fine Foods when you get a chance?  TIA

I eat at  my desk every day as long as I don't forget to bring something for lunch, which happens quite a bit.  Then I just eat an apple.  Sometimes, I envy the men and women who actually take a lunch break.  

 
So Mr Bob has been most helpful.

Anyone else have any parking recommendations for parking at Wrigley.

Yes, I have to have a car as we land and are heading straight to the park before our actual plans.

I've been on websites Mr Bob recommended and have a few ideas but before I park in someones actual home garage I'd figure I'd ask

 spothero.    Last year we were able to get a parking spot a half mile away for $10 in a lot under the El tracks just off waveland.

That's what I ahve been using. Just weird to see a bunch of peoples home spots :lol:

And I called and they only have 2 Lots open tomorrow and the Cubs lady told me if I get there by 11 i should be fine.  I won't be in that area to probably 1:30 at the earliest
