What's the X part mean?

I click on contest and then entries and for X5 I see the name of the contest starter 5 times.

Do I have to beat 5 teams?

Beat the best of his 5 scores?

finish in the money and get x times your entry fee. The bigger the x the higher percentage of entries you have to beat. A double up is X2.

At Fanduel, I search head to head.

Paste-H2H vs. the_woat x19

Prize is $9 cost is $5.

I click the contest and it lists scoring under the info tab.

Under entries, I'll paste again-

So this is what makes me think I gotta beat that guy 19 times or better his score on 19 teams while I only get one team.

This just means he has posted 19 H2H contests at that price level. You can take one of them or take them all but each is a separate H2H contest.
