Here is an alternative that I do:

Half a russet lengthwise, then cut each half twice lengthwise to make wedges. Toss with olive oil, smoked paprika, and hamburger seasoning. Assemble them skin side down on a baking sheet and roast in a 425 oven for 30-40 minutes.

Easy, and you don't have to mess with fry oil.
