McClure's BBQ (1 Viewer)

Heading into NOLA tomorrow night for a few days. Trying to figure out best day for all meats and all sides.......
That would be every day....

ETA: I would do a double on either Friday or Saturday- hit McClures and then head to Tipitinas - Friday is free with Corey Henry Treme Funktet a killer Band or Saturday is Nigel Hall some sweet funky soul - can't go bad either night

How did you even think of that egg roll combination? I'll be there for a week in October. Special order for Smails' group?  :)

I had some spring rolls at my favorite Vietnamese place that week....the noodles in them got my wheels turning.  Everything else (except the fresh ginger) I had here already and it just kind of came together.    The dipping sauce would have made turd eggrolls palatable :)

 
you would be amazed at how skinny he has become.   lap band surgery I suspect....he was tiny for him.
I suppose everyone will see if that new season of Roseanne actually airs.

Any news on that weird law that wanted to cap restaurant sales in/around tap houses?

I won't lie...the biz has dipped about 5% over last year....mainly because

1. more than double the bbq joints in town since I started the pop up nearly 6 years ago ...closer to triple.  

2.   5 or 6 more breweries have opened in last year...heck 4 of those in last 3 months.

3.  there are WAY too many restaurants in town now.   we are competing with nearly double the options to eat out compared to the years before Katrina.  1400+ restaurants from 800 in 2005.  Less people, but more choices. 

4.  festivals....seemingly one every weekend.  It really hurts brick & mortar places to lose significant crowds to draw on.   

Luckily catering continues to grow.   Enough catering this month to cover two weeks of payroll...so cool.

Primary investor paid off over last year and he is out of the picture.   Halfway through paying off credit line.   Credit card fairly maxed, but will be able to attack it once credit line is taken care of.   Maybe 6 months from only having a little bit of family debt and I could (crosses fingers) be debt free except my house.   I pray I can hold on through the summer...it will be a stressful next 16 weeks.  I should not have gone so aggressive with debt payments as my cash flow is now uncomfortable.   But I am a known worrier.

All & all things are good.   I am working a few less hours these days and actually taking a good amount of down time to be around my kids more this summer.   I feel some shame in how much I've worked over the last few years since getting Magazine open. 

Loving my spot at NOLA, but know I need to start planning a more permanent home.   I want to buy property and have sheds / containers / buses or trucks as the kitchen and some seating.  Big focus on outdoor seating, but covered and lush.   A boy can dream.

Irish House going down was a surprise for me, it was one of my favorites.

I was down for 12 days of Jazz Fest and put on around 15-18lbs - with lots of walking and dancing. But plenty of beer and good food got me. Came back home and it was gone in around 2 weeks. You just gotta forget the scale when you are there and clear it up later.

Any areas in mind?

 
Lakeview.  Elmwood.  Westbank.   Under served areas like that..     Staying uptown would be nice, but I think I can do more biz elsewhere for less overhead.
South Shore would be good if that concert venue that Tips is going to do out near Lakeview airport gets going

 
Just had a great lunch there (although missed Tipsy). The brisket was on point.  Love what you're doing and good luck with wherever the next spot takes you.

No reason why not. Tipsy had a ful restaurant at Magazine Street before he came into NOLA brewing's tap house. It was probably just too close by so was cannibalising customers

I remember also that at the Magazine Street one he couldn't run his smoking equipment properly due to neighbors.

Wonder if he could have one main, central location and ship food over to NOLA as needed. Maybe with just a small piece @ NOLA  for the beautiful smell!!

Ugh...I left right after noon and didn't think about your visit until I was sitting on my couch.   Sorry I didn't wait a little bit....3am brain gets loopy pretty quick these days.

Let me be clear....I do not want to leave my spot here at NOLA.   The catering sales here are fantastic (3 private party areas....the last two months those sales were equal to my regular business sales) and I will hold on to that as long as I can.  

One problem I would have to deal with is the ATC (alcohol & tobacco commission) for LA:   They won't let me own any biz that sells alcohol as I am in biz with the brewery.    It is a stupid law, but there is talk that may change.

IF I do get another spot and keep this one open I will definitely be hiring enough people to make that happen....something I didn't do when I opened here at NOLA.    I really couldn't because I knew Magazine sales were going to drop and they did.   If I had enough people it would have been easier on me, but It could have doomed my entire company based on how bad last summer was for most places in town.  Make sense?

Definitely !     I would let NOLA keep up on their own ribs, chicken and sausage, but would centralize everything else at new place.

Until the law changes sounds like food trucks are the only realistic option for expansion (unless you can go into biz with another brewery in the area (but not too close)

Meh...Magazine didn't sell alcohol and was just fine.    I want those sales, but I'd rather have my own B&M so my fate is more in my own hands.    Putting this location in my wifes name may be the only thing I really need to do.   I'll cross that bridge when I actually am closer to moving forward.

I have wanted a food truck since I started.   BUT....after talking with several truck owners it is so restricted here in town, quality employees so scarce, and conditions inside trucks in the 5 months of summer have lead me to abandon any thoughts of going down that road.   Plus those trucks are generally maintenance nightmares unless you can afford a brand new one...if you can you can pretty much afford a B&M space and that is a better quality of life.   I'm too old for notions of taking that thing to bars everynight and down to the cbd everyday.

If any of you jerks wants a piece of this action you are welcome to buy a truck and come down and run it.   It could be pretty profitable if you can stand it.   I'll sell you meat & sides....all you gotta do is sling it! :banned:

There are harder jobs and environments.    It will always be in the back of my head that a truck would kill it.   I just need to focus on a permanent home in case anything happens with my relationship with brewery.  They could have a big dip in sales and decide they want something new and exciting in here.....clearly that would be stupid of them since I am so freaking awesome :D

I love the space in mid city along the greenway (near Second Line Brewery).  Lots of warehouses and such there.  
The greenway is going to get a full bar / restaurant soon down by Bayou Beer Garden.   Don't you think with Blue Oak up that way and Frey nearby as well ....heck that area is really only a few minutes from CCBBQ....that it might be saturated w bbq?      Not ruling it out though!

Yeah guess so....I forgot about Frey.  

Would love a lakeview location, but I just don't think there are any empty spots left....unless they open up the development on the lake.

 
Shark move would be lining up your finances, rough plans, etc. and jump on one of the restaurant locations that goes under when the bubble bursts (which I agree with you it will)

 
Eli5 why you cant sell booze if you own a brewery. 
I'm not sure if this is what he's referring to and I also I don't know what the law is in LA, but in the county I grew up in in MD a person could only hold one liquor license at a time. That's why people would have their relatives "own" other bars or liquor stores (which tipsy references doing; hence my assumption).

Just a customer POV here. I love your BBQ, I do. But when you were on Mag I would just go get a beer at Bon Temps, a place I also love.

Good beer & BBQ is a must these days. Dare I say I like Blue Oak because aside from the BBQ... they have some good beer selections. Nola also speaks for itself beer-wise.

The fact that there are more BBQ places now, maybe ironically thanks to you, should maybe also point to the landscape being a little different now than when you were on Mag, and if people want BBQ & good beer that could be a determiner on where some go. Just a thought.

I might regret this because I love NO and want you in NO... but you ought to talk to whoever runs Theos on Vets. It sure looks to me like they are doing great business in that dry stretch between Causeway and Bonnabel. And, again, as a side note, yes they have good beer. Great pizza too.

Consider where MoPho is, on City Park Ave. Right by Delgado, within walking distance of 2nd Line (like a block). - Blue Oak is way down City Park & BBG is over on Jeff Davis, they're not that close.

Absolutely.    Ideally I will be able to go big enough that staying at NOLA isn't completely necessary....but I will hold on as long as they will have me but I won't blink if we cannot figure out how to allow both legally.    Fairly far down the road at this point.    But I need to start planning for it... I believe this is my forever job so I kind of need my own roof.

 
I might regret this because I love NO and want you in NO... but you ought to talk to whoever runs Theos on Vets. It sure looks to me like they are doing great business in that dry stretch between Causeway and Bonnabel. And, again, as a side note, yes they have good beer. Great pizza too.
I think if I could find reasonable rent on that stretch I would absolutely kill it on Veterans Blvd.   I have a good mutual friend with Theo's owner...I'll ask her to find out some info if possible.    

I0 years ago I never would have considered anywhere but Orleans.   Now that I've bled enough as an owner, I see that strip from Lakeside down to Celebration station as the "holy cow I might be able to semi-retire before i'm dead" kind of setting.  

 
Hey Tipsy,  I have a buddy on a business trip in New Orleans and I told him he had to stop by.  His name is Neal and been in the meat business for 25 years.
