Yup. At least most of my friends know I am a amateur BBQer, so I can at least say I know this guy from a website I get a lot of my BBQ ideas from. Sounds cooler (somehow) than saying I know someone from my fantasy football website.

and todays brisket is top notch. this one day after ruining them. I think the TEXAS CRUTCH (wrap loosely in foil once they get to 160) is the way to go now that we are getting into it. never wanted to cheat, but it is making it more juicy. And they finish 2 hours earlier with the same amount of smoke and flavor...just more juice.

 
There is a reason people use the crutch. I would assume you are not losing much bark with the crutch so why not.

Everything I know about "real" BBQ comes from watching TV, so take this for what it's worth, but don't most/all of the competition BBQ chefs inject and wrap their meat? Is that considered "cheating"?

Injecting is cheating IMO and pointless. Competition BBQ Brisket all takes like beef broth. Which is fine if you like beef broth. Now all the comp guys are injecting pork butts too.

Buy Choice+ or higher grade and injecting is no longer an issue. Regular Choice or Select and you are looking at probably needing to do some PED.

 
Yea injecting blows. I can't believe some of these competition shows where you see guys pumping IV bags worth of beef broth or apple juice into their meats. :X

I'm hesitant to start hitting them up every other day for sales numbers :unsure: I hinted toward a number "looks like he sold 20 or 30 shirts already?" and he said "yeah it's been good and steady". I didnt press as he was driving and prob didn't have the numbers in front of him.

They will start shipping them this weekend per a phone call I had with John today. I need to print the cards that will be included and get them over to their shop downtown.

So... Tonight McClures Competition Barbecue team was born... Memphis edition anyway though I believe the plan is for our crew to travel for support regionally. We will have folks helping Neil at the two MS events... I will personally be making it down for the Nov 1st event.

We're now in the process of assembling a team of guys who will bust asses to make sure the rest of the booth/event is on par with the food that Neil will be producing. Have finance guy, attorney, two badass DJs, major concert producer/promoter, electrician, scaffolding engineer, etc. not to mention he majority of the guys are all backyard BBQ nerds who will be helping tipsy as needed in the pit.

We will be competing under the McClure's barbecue flag for MIM though... Time to get tipsy some hardware for his shop. :banned:

If a 3-legged bull dog is good, I am pretty sure with a little help, we can get a no legged bulldog and really rock the contest.

 
oh thank god.....a day off. glad i didn't volunteer to do all the shopping, hand cut 80 steaks, make salad, and bake potatoes for the mens club at school tonight....oh wait...

The stuff sounds excessive for a BBQ team until you actually go to MIM BBQfest and realize you're basically building a restaurant/nightclub with a $25,000 budget for 3 days. :)

When do the initial shirt orders get shipped out?
Today from what I understand. Dropped off the insert cards on Saturday afternoon.

Just FYI, Tipsy's rub is potent stuff.. expect your shirts to smell like BBQ rub when you unpack them. There is also a slight chance of these baggies rupturing in shipment. In any case some folks may end up wanting to wash the shirts before wearing them if the aroma bugs ya. :lol:
