McClure's BBQ (1 Viewer)

its 4 am and I am in total agony....

stepped off the deck to grab some firewood yesterday afternoon and twisted my ankle like never before it would seem. I honestly thought I would see bone sticking out when I did it yesterday.

This should be fun to deal with this weekend & beyond. I wasn't going to go to hospital....now I think I might have too. At least I already own crutches.....OY.

If nothing else, get a walking boot. Crutches don't seem like the answer. Sorry that happened. I have horrible ankles and feel your pain.

tipsy - gonna be doing the wings tomorrow. 2 questions:

1. Is it too much if you bring them overnight? I know you mentioned 3 hours minimum.

2. I'm just going to be grilling them and not frying. Thoughts on a "rub". I typically just to S&P and then toss in crystal/butter mixture.

:thanks: and hope your gimp foot gets better

ETA: just found this online, how does it look. The cumin has be a bit

2 tsp. Salt

1 tsp. Black Pepper

1\2 tsp. Ground Cumin

2 tsp. Garlic Powder

2 tsp. Onion Powder

1 tsp. Cayenne Pepper

2 tsp. Smoked Paprika

1 lb. raw chicken wings

Hope the ankle is doing better... McClure's Barbeque apparel will be making what I am guessing is a first ever appearance in Amish country this weekend :D

:(

Just in time to go to 7 days a week!!!!!

An STD would up there too, I guess.

After nearly 5 months on crutches, casts, walking boots etc, I never want to go through that again. It is sad when you have to wait on your porch, for a buddy to pick you up, cause you can't drive. Just to get out of the house....

Best of luck on 7 days a week, Tipster... ;) :hifive:

ankle injury > gout
no way. my friends with gout have stupid diet things and can't drink red wine. I'll take agony for a period vs lifetime of cant do this / cant do that....
Well, there is excruciating pain and agony with gout too.

7 days a week....lunch & dinner....starting now....except closing early to let everyone go to game....which i gave up my ticket to just now because my ankle is so swollen I cant even think about hobbling to & from the dome...(old guy excuse I know).

And I finally get a couple of nights watching the fire.....that was the whole reason I did this...the peace & quiet is needed in my life.

At the gas station with wifey who was wearing the oh so soft McClure's T, this women next to us asked where the joint was. They'd just moved up from Arkansas and were looking for good q. Said they'd look the place up next time they were in New Orleans.

Made the wings with the rub on Sunday. First time I have ever brined anything and loved it. The wings were great grilled after the brine. That little packet easily coated the 30 wings. The only thing my wife thought (my oldest said they were the best I've ever made) was that I didn't need any salt with the rub because of all the salt in the brine. I think I agree with her, but they tasted really good and I really liked the rub flavor. I am going to have to keep experimenting with more brines because the wings really did taste juicier and I already like my regular grilled wings a lot better than anything in restaurants.

I effed my wings greatly b/c I added too much salt after the brine. Next time, I'm going no salt at all

And just to make the week even more fun.....my twisted ankle from last weekend....it was recovering nicely. Heck..even the bruising wasn't noticeable this morning. that is ....well....

Until I stepped on a rock the size of a rubber ball and rolled the ankle so severely again that I ended up hitting the ground face first ...actually wrist first which now is hurting even to type much less use the crutches.

I'm taking 2 days off and drinking my blues away. Just in time for the catering order on Friday morning for 270 people. :wall:

:( Sorry GB

Oh I almost forgot. I made a smoked port shoulder rubbed with Tipsy's magic + salt, pepper, and brown sugar. It was so good the in-laws actually like me now.

Agreed, no salt is necessary after the brine, especially if you aren't a salt guy. I don't put salt on anything if it isn't already in a seasoning mix or in a recipe, so I could understand my wife's comments. I didn't think it was way too salty, but it definitely didn't need it.

We need to work on your walking skills. Seems like you got the brisket back in order, so here you go (http://www.telegraph.co.uk/health/wellbeing/7935172/How-to-walk-A-step-by-step-guide.html):

Walk this way

  • Relax shoulders and keep them back and down
  • Stand tall with a slightly lifted chest and a straight back
  • Opt for a rucksack that distributes weight evenly across shoulders
  • Bend arms 90 degrees at the elbow and swing in time with the opposite leg. This balances the body
  • Point chin down and pull in slightly to place neck in a neutral position. This supports the head and prevents neck pain
  • Check hips are level; knees pointing forwards. keep pelvis tucked under torso
  • Check steps are of equal length
  • Don't tilt your head to one side, hold it straight
  • Don't slump your shoulders
  • Don't strike the ground with your toe first. use your heel first, then feel the pressure roll towards balls of your feet, then push off your toes
I think most portly people slump their shoulders, thus created a natural downard sloping of the chin toward the chest and this could lead to some issues with peripheral vision, hence stepping on rocks instead of avoiding them. HTH.

I came in here to post something like this, only less elegantly. The only thing I can add is: "WATCH WHERE YOU ARE GOING!"

I was contacted by the local paper the Time Picayune this week. I haven't been served yet, but it seems my neighbors are suing me over the smoker, and my landlord for illegally allowing me to lease this space without their approval and other various perceived infractions. I am not saying more until after I speak with my lawyer says I can say anything. I had no comment for the paper which I think is how I will keep it here for now. Sorry I cannot be more forthcoming.....

I do ask that no nefarious action be taken on my behalf. I know pranks sound funny....but these folks are trying to ruin my life right now and I need yall to not poke the hornets nest.

Good luck Neal. Keeping a level of civility would be incredibly hard for me, were I in your position. Try to keep your mind focused on the business, though I realize it's pretty much impossible. I would just hate to see this cause you to lose focus and let the restaurant decline.

This sucks. :(

That just seems sort of petty (not that many lawsuits aren't petty) but take a step back and look at that for a second. Your landlord would have to check with all in the neighborhood before leasing a space? No way a judge would let that get very far. But you still have to fight it...
