With all due respect, get moving. I know this is stressful, financially and with the new business. But drive this ####er. Get moving. You have a proven and high quality product, the work ethic, the support here and within your community, and some great publicity. People are asking you to sell your product. They want it.

You only have yourself between now and the future you want. We all believe in the dream. Those here who have had your food rave about it. You can do it. Grab this dream by the ####### balls and knock it out.

not until i get my rig somewhere I can sit with it for 10+ hours while cooking....the house is off limits now. :kicksrock:
just a thought here...there has to be some church/school/non proft that would be willing to give their space out to you for a few months in exchange for catering an event for free or cheap rent.

My backyard is open. Just a 60 mile drive and about 5 minutes till the wife kicks us out.

A breakfast & lunch only spot in uptown has invited me to open up for dinner as many nights a week as i want. We have details to work out....but wow. just wow. its the first place I ate in when I moved here back in 1990 and have probably eaten there more than anyplace I didn't work at.

This should take a huge amount of pressure off needing a speedy open of my permanent space...which likely wasn't going to happen before years end anyway.

I'll have more info as I get it. Funny how quickly things change. :banned:

Yeah. Put some thought into how you can ship a BBQ care package up to Rohn Jambo AND keeping them finger licking delicious!

yeah....this has been an interesting year for me to say the least. even with the good news yesterday, i still wake up constantly during the night with this overwhelming sense of anxiety & doom...only way i can combat it so far is with the walking of the dog and hitting the gym for some cardio. if anything im going to be in pretty good shape by the time this is over.im going to have to buy another pit to keep on their property. mine is on a trailer and they don't have room for that back there. by the time i move into my permanent space, ill be tripping over the number of pits I have :)

Know what I'd do Tipsy?I'd be looking to go over to Mahalia Jackson for Uncle Lionel Batiste funeral on Friday - be in that number and reflect on how he navigated this planet - he certainly never worried about anxiety or doom that I could ever tell - smooth as silk. I'd go over there and think about that and dance my ### off and certainly reflect on life and death as only you guys down there know how to do. It might be a zoo but it may help. Wish I could be there - guys like that were put in your city for a reason and to get you through days like you might be having.

I have a guy that wants to partner up, we have found a space with good rent and fantastic neighborhood (Magazine st), and already have preliminary plans drawn up by an architect. Renovation will begin as soon as we get our permits approved and our partnership agreement is finalized. that is assuming nothing else changes rapidly this week :)

You sure you're willing to chop this up into two bits? Partnership agreement hopefully is ironclad! :thumbup:

Money. And connections...seemingly knows everyone in town including our architect, contractor, and landlord already getting the ball moving faster than I thought possible. He promotes music here and in Chicago mostly. And he doesn't want anything to do with running a bbq joint or working in a restaurant. He just wants some equity. I get a restaurant out of it. For a price of course...but i'm ok with it so there it is.

As long as he stays out of the kitchen and understands that you know what your'e doing with regards to be restaurant business, and allows you to execute on your vision then good deal! What is the exit strategy if at X years you decide you want to go out on your own totally?Regardless, sounds like you've found the spark to get the fire rolling. Congrats man! Keep me in the loop for the grand opening!

He became my biggest fan immediately last fall when I 1st popped up. Has repeatedly told me his confidence in my product and work ethic is why he wants in. From day 1 no less. Not sure about exit strategy other than offfering a buy out number after original investment paid back. We both talked about outs if we want to split...but more discussion needed.

you still haven't had "my" ribs. the ones i cooked were not brined like i normally do.
 
so do you think you will be cooking anywhere by november? We will be in town for the color run on the weekend of the 17th i think it is. We wanted to stop by the last place you were at last June but just couldn't find the time. Mobile isn't far but with two little ones and no family near by its hard to get away to NO like we use to.

and i just was asking assuming you were not going to be in the new digs by then. Not sure what your time frame is.

not sure...probably not cooking until im open and no idea realistically when that happens. it really comes down to permits as we are on a mission...

Tips you are living the dream. Enjoy it and don't let the anxiety get too you to much.
trying....but my brain activates around 430-5 am every morning and am usually out of bed a good half hour before the sunrise... so to help i started walking a mile or more with the dog every morning followed by an 1/2 mile swim or more.

Exercise definitely helps to relieve that stress and anxiety. Congrats Tipsy!

i'll need a sign..shirts (like the quality of the team shirts), and i need to come up with direct marketing mailers to businesses nearby & downtown. i do want to keep the sign black & white with my logo we used before. that font is a tweaked one from apple.
