McClure's BBQ (2 Viewers)

hood finally completely functional (the ansel system wasn't wired). Need a state fire marshal inspection (no problem), the health inspection which is usually the hardest (but i think we will nail it....kitchen has 25 years experience between 4 guys not including me), and a permit to operate. All these thing could be done in next 3-5 biz days. Hopefully we open next weekend.

I am crazy with anticipation.

Good for you. It's cool to remember 15 months ago when you were just thinking this up. Happy it's finally coming true for you.

i've never been to New Orleans before, but i think a visit to McClure's is enough to push me over the edge and find my way down.

Wish you the best of success - the pics on FB look fantastic. Way better than I would have imagined if you had told me the concept.

Hoping to coordinate a trip to NOLA to visit neil's spot in september in time with my buddy Patrick Dodd playing a 2-3 night stint in town as part of a Southeastern Tour. Waiting to hear back on dates but good chance we'll be coming down with a few folks for that weekend.

Gonna maybe see if Pat wants to do a little solo acoustic set one afternoon at McClures or something :whistle:

 
I was just watching something on Destination channel or travel, not sure

It was this guy in Texas who basically sold brisket out of a truck on wax paper. Looked awesome. had a line down the road.

But when his food was gone, he posted a sign saying no more for the day.

I know you are smoking all morning to have the food ready, what happens if you run out of food

It happens! That's how BBQ joints roll. Food with long prep times can sometimes run out. Not like you can just whip up another batch. That's the balance of cooking too much (waste) or not enough (missed opportunity).

no, that wasn't it and it wasn't Aaron Franklin either. I know him from BBQ grill masters with Tuffy and Myron. Let me see if I can find it online. Doesn't help that I don't know what channel it was on.

Tipsy, I have enjoyed this thread more than any other thread I've followed on this site since joining in 2003. I love to cook, I can stumble my way around a serviceable rack of ribs (for a CT boy) and have lived vicariously through your entire journey here.

I know you are close to the open and while I know you don't need it, I sincerely wish you the best of luck in your new spot.

Its called BBQ crawl on Travel channel. I dont see the episode I watched. Not sure why, but I cant find it. It does have the episode at Louie Mueller that I think Tony saw, but not the one with John at his roadside place.

A week?
YOu can swap a hot water heater in a couple hours max... depending on where it's located.

However this is NOLA. I'm sure there's some crazy permit/inspection you have to get from some office only open every other tuesday from noon-2p. :lol:
