McClure's BBQ (2 Viewers)

A local place has billboards and shirts saying "you can smell our pits for miles". I think it's clever. Although I prefer something like "watch while we give your wife our meat and hot juices"

 
Great news, I will be checking in from Hawaii on Sunday to see how it goes. Hope you sell out the whole first week.

 
6 months...and a permanent one after that if the argument between the landlord & condo quiets down. Could still be bad. I feel bad for the condo owners....they thought the condo came with a parking space. but the city has said they can't have all four (originally said get rid of all of them) ...only two. and now they are pissed about the smoker...even though it vents nearly double the distance from their buildings as the code calls for

Even worse, who the #### moves to New Orleans and complains about the smell of food. That's like complaining about sea gull #### on Cape Cod.

Okay, best question I can think of for a new restaurant. If I put $100 on your counter and said I wanted takeout worth $100, your choice, what would you give me?

 
So I will be driving from AZ to Chicago next weekend. 2 day marathon drive. I usually go through OK City and up north from there. I'm really tempted to go down to NO but that's gotta be like a 10 hr detour right?

If I had the room inside....I would be cooking for 400 based on phone, internet, drop byes, etc. It feels like calm before storm for sure.

I still don't think it's enough food. Probably enough brisket and butt; but 10 chickens is enough for 50 people and 15 pounds of sausage is barely enough for 80-100. But selling out is part of the allure/appeal. :thumbup:

I'm assuming he will get crushed tonight (In a good way), and there is no way of judging what needs to be cooked to feed the masses on opening night.

And selling out at a BBQ joint is a very, very, good thing.

Ribs are my worst thing to waste...so they out when they out. the brisket will run out. pulled pork will not, but i need the leftovers for my beans and upcoming latenight menu.

but no...it won't be enough food. but if I serve the 225 I'm targeting than I am a freaking genius.
