Went here for dinner. Meh. Can't hold a torch to McClures I'm sure...
I've been there a few times. Always liked it a lot. Wish I was closer to New Orleans. I'd love to visit McClure's. I haven't had a great brisket in a while.By the way, you live in Michigan, correct? Don't you have to be from Ohio to come to the NC/SC beaches?
Yes... from MI. Not sure about the Ohio connection, but if I had my druthers, I'd be in Destin, FL.

Last time I was here in HH, OHM was really good. Last night it was worse than Famous Daves (by a good margin). Maybe we just hit it on a bad night.

Ohioans are like those rat commercials at the NC/SC beaches, You see some other state plates, but it seems like 50% of cars are NC/SC, 25% are VA and other northern states and 25% are Ohio. We usually like it when we eat there, so probably a bad night or just a bad job by the cook. We've been going to Hilton Head every summer since we moved to Charlotte 8 years ago.

Anyway, enough about that, time to get back to portly and self-important topics.

 
50 gallons of Red Beans & Rice

40 gallons of Chicken & Sausage Gumbo

prep for 60 gallons of Jambalaya (to be cooked on site)

25 briskets trimmed & ready for smoker tonight

40 pork butts seasoned & ready for the other smoker tonight

3 cases of cabbage shredded & 10 gallons of dressing for slaw ready

1000 loaves of poboy bread ordered

I think I might be ready for the music festival i'm catering tomorrow....

my partner put together a huge concert called Fiya Fest with a bunch of jam band / funk groups all playing on two stages down on the river at mardi gras world. Last year we drew 4k...shooting for double that this year....the day ends with a paddle wheel boat pulling up, going down the river for a jam cruise, and parking at a bar where they are throwing an all night after party. I will say he has cajones for doing this while Jazz Fest is going on.

Beef, pork and bacon has gone through the roof.
And limes
Limes were 14.95 a case last fall.....they are 105.95 right now. Never seen anything like it.
Looks like i'm hitting the local mexi-mart for our limes at the BBQfest booth :eek:
Apparently the trucks in Mexico now have to have armed guards because the cartels are raiding the trucks and selling the limes themselves.

Mexi-mart might not help--we've been serving lemons. I questioned it but most locals have said they do either-or at home. Not what I expected.

Despite eating some great meals in NOLA this weekend, including at John Besh's Restaurant August and at a funky place called Root with the best charcuterie I have ever had, that McClure's brisket was the single finest thing I ate.

I've thought about trying to raise some capital with a bank to attempt to buy out my partner & buy a food truck....
has he given you a number
no...we haven't talked about it but i know he is trying to raise money for his other venture right now (music production). I think just buying him out could be done for 150 or less.

dont do a food truck. fools gold IMO. just stick to what has been working for you and build on it. The traditional path to success works for a reason in the restaurant biz

ETA: Congrats on the show. Have a plan for how to capitalize on the immediate post show publicity

Awesome publicity for you. People go in search specifically of the places Adam (and guy) check out when they're in town.
No kidding. There are two little places near me that exploded in popularity after being on TV. One is a tiny breakfast & burger joint that was on that idiot Guy Fieri's show and the other is a pizza place that was on Man vs. Food. Both are still consistently packed 2+ years after the shows aired. I had never even heard of either one before that.
