Despite eating some great meals in NOLA this weekend, including at John Besh's Restaurant August and at a funky place called Root with the best charcuterie I have ever had, that McClure's brisket was the single finest thing I ate.

dont do a food truck. fools gold IMO. just stick to what has been working for you and build on it. The traditional path to success works for a reason in the restaurant bizno...we haven't talked about it but i know he is trying to raise money for his other venture right now (music production). No kidding. There are two little places near me that exploded in popularity after being on TV. One is a tiny breakfast & burger joint that was on that idiot Guy Fieri's show and the other is a pizza place that was on Man vs. Food. Both are still consistently packed 2+ years after the shows aired. I had never even heard of either one before that.
