McClure's BBQ (1 Viewer)

Can someone quote tipsy's wing brine from earlier in the thread? I'm on mobile and search sucks

Was there today. Great meal, fun to meet someone from the FFA. Tipsy is a nice guy with lots of 'southern' hospitality, except for trying to bribe my kids to continuously ask 'are we there yet?' on our 5 week trip around the country!

crickets....i've had a full plate. still w limited menu at brewery...problems i wish not to discuss but they are getting solved and we are getting the buzz already.

really wish I had a clone.

So how are things going? The Mag/Bordeaux location was out of brisket and some other things today, plus closed at 200 pm? I will say the tables were almost full. I had the chicken cordon bleue sandwich and creole potato salad. - I take it things were crazy at Nola... where I also went. It was nice and cool today with the rain, fantastic afternoon.

So I caught a new show called Burgers, Brew and BBQ (or something like that)

Can definitely see how these shows reel in people. My wife and I are going to head into NYC next week to try the place they had on yesterday.

Hope you make it on that show Tips. Just another notch for your belt

Ill try to fill in later.....I'm so overwhelmed I can barely focus. Biz is killing it at the brewery. The place is a really big scene now and only growing. upcoming football season going to be unreal. I may have to close other store another day a week (tues/wed) just to keep up in the short term. Its summer...nobody will care. I'm stuck w 7 days a week at brewery so there it is.

That's Michael Symon's new show I believe. Only reason I know of it is he's a huge CLE fan and is always on sports radio here so I here about what he's up to all the time. Tipsy you should absolutely reach out to him on twitter as your spot is exactly the kind of place he is looking for.

awesome. still haven't made it over there, but will soon. Any reason you can't shut down other store altogether and operate solely out of the brewery?

Not sure if I should say awesome or be concerned for you.

I'm happy you are succeeding but your health comes first.

I've heard great things about the new place. Can't wait to get down there. Wife and I will probably get a hotel somewhere and spend most of a Saturday drinking and eating there before stumbling back to the room. Pretty sure I'm not going to want to hit the Causeway after an afternoon at the brewery.

Looking like I can swing by 14th, 15th 16th of next month. So I guess I'll hit Magazine for all meats all sides for lunch and the brew room on the following day for dinner when I come out of hibernation!

Going to be in NO soon for a week. Cant wait to see the new location. My kids loved the food at the original spot but the new place looks great.

The wife and I just got off a cruise and are staying in NOLA for 2 extra days and we are going to try to make it to the brewery for lunch today or tomorrow. Maybe even a tipsy sighting!

Posting live from the NOLA brewery. Tipsy is awesome as usual. He disagreed with me but this is the best smoked chicken I've ever had.

That's great, Tipsy. Please take care of yourself. We all want you to live a long life to enjoy your success.

trust me...on the mind. this place will far exceed the other store shortly, especially once kids are allowed to eat here (aug 1st law changes!!!!). but...until 2nd kitchen is built here I need the other one just to help keep up on prep.

and i spent all the money for that place and can continue to run both....my biz mind says stick with it...its a space on magazine with a full kitchen I built....if anything i keep it open on weekends (peak biz) and use it the rest of the week as commissary and pop up location for hairbrained ideas i still have (ie Jamaica night...Morocco night....and of course my fried chicken night which was my life long ambition until brisket happened. Or I turn it into a completely different concept of just brunch and poboys....easy to manage and staff and way better food cost. My immediate self would close it in a heartbeat...i am at my limit. But i'm taking time for hiring this week and will make this shiiite work. 130 hour weeks have to stop.

 I know you got it

btw....last week was my "shortest" week in over a month: I was only onsite for 115hours. and according to my pedometer....I only averaged 13.2 miles a day.

Anybody know a good leg doc? I'm going to need new ones.

Awesome work tipsy! I know you're exhausted. Hard to know when you can actually pull back a little--but you need it; good luck with that!

Fyi these early votes are only for seeding..... they are reset for each round of the "tourney" once it begins....

Not sure first or second place matters.

Had lunch at the new location and was lucky to spend some time with Tipsy.

Absolutely great meal. All meats, all sides was perfect for me, the missus, and our two little girls. My wife is from NO and I lived there for 10 years, so Tipsy and have some things in common and it was very cool to talk about his business and NO in general (New Orleans is a small town). New place is awesome and the pairing with NOLA Brewing Co., is perfect. The future plans for the entire location sound like they will really take off, and we will now be back every trip down.

The baked beans were unreal--hint of cumin put them over the top. The mac and cheese was outstanding, as I remembered from the original location last year. My favorite side was the jambalaya, though. I am a white jambalaya snob and Tipsy loads his up with every meat. I was in heaven. I hant tried the mayo based Alabama sauce and it was as good as everyone has been telling me. The smoked sausage was the best I have ever had, and I eat a lot of sausage....wait, that doesnt sound right....

Thanks again for a great talk and a great meal, Tipsy. My little girls are in love with your food and my wife gave me another thumbs up for another great meal choice. Getting ready to hit August for one more, hopefully....

You know, I worked in the restaurant biz for a few years and am now a Health Inspector. Not a bad manager, cook, dishwasher, waiter, caterer, host. Willing to relocate. Just saying.

That's what we did on our last trip. McClure's + August - that's a pretty damn good trip

Great trip. We did Cochon Butcher and Domilise's for a couple lunches, too. I think I gained 10 pounds in 5 days.
