I don't draft for a couple of weeks, but I was wondering how much weight I should put in SOS when making a decision?

Guys like Palmer and Delhomme have tough schedules, while others such as Green and Plummer have much easier schedules (particularly in the late weeks) and can be had much lower in the draft.

Green does have an easier schedule, but is now in a system that the coach has expressed will be more conservative. Plan is to cut down on his mistakes. Herm does not tolerate turnovers, thus he will minimize Green's chances of making them, and thus limit his ability to put up the FF numbers we've become accustomed to. That is a bigger key than strength of schedule and would fairly explain his lower ranking.Plummer, on the other hand, looks like a great later round value SOS or not. I rank him ahead of Delhomme, actually. I just don't see the reason why Delhomme is a top ten QB right now.
 
Chase Stuart does an EXCELLENT job of showing the normalized (SOS adjusted) performances for QBs last year in Rearview SOS (subscription required).

I look at it as yet another factor. In Eli Manning's case, it's impossible to ignore his schedule difficulty. But it's also reasonable to expect sustantive improvement this season as he continues to mature. Will they completely offset each other? If that's the case, Manning is a top 5 fantasy QB. Will his schedule lead to worse numbers this year? It's possible but I have trouble forecasting that given his age and that he's still on the upswing of his natural learning curve.
