Sweet Potato Souffle

4 lbs. sweet potatoes
1/2 cup butter( 1 stick)
1 cup sugar
4 large eggs
3 tablespoons flour
1/2 teaspoon baking powder
1 cup milk
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon coconut extract
1 teaspoon almond extract

Topping

1/2 cup chopped pecans
4 tablespoons brown sugar

Cook 4 lbs. of sweet potatoes until soft( boil or bake about one hour).  Place peeled cooked sweet potatoes in a large mixing bowl along with the next ten ingredients and beat with mixer until throughly blended. Pour sweet potato mixture into a 9x13 baking dish.  Next, mix chopped pecans, brown sugar and cinnamon together in a separate bowl. Sprinkle on top of sweet potato souffle.  Bake at 350 degrees for 1 hour.

I can't stand sweet potatoes, but this is one damn good dish.

This sounds interesting
I added the recipe above if you want to try it.

My kids don't like sweet potatoes either, but they can't wait until Thanksgiving and Christmas for this to be made.

Ive never been a fan of the marshmallows, I like the brown sugar though

Wife makes a dish that's like mashed sweet potatoes with a brown sugar and pecan crust on top

yeah, pretty much what ours is - and it's great with savory stuff like stuffing/gravy.
