This sounds fantastic. I'm curious about the sweet potato casserole. Those sweet potato with marshmallow things always make me cringe. What's in this?
 
My Grandmother's Cranberry Sauce:

2 packs (12 oz each) cranberries
1 jar orange marmalade
1 cup sugar (used to use 2 cups sugar)
1 ½ cups apple cider
1 tsp cinammon
½ tsp ground cloves
½ tsp allspice

Bring to a boil and then lower heat and simmer as cranberries burst. Simmer for about an hour and mash up if you need to.

Best to refrigerate it overnight.

Serves about 12
 
My sweet Mom wasn't an exceptional cook but she loved her family well. Towards the last few years of her life, this was pretty much the only thing she contributed to the dinner and that was great. It's not remarkable. But it reminds me of her and I try my best to make it each year in her honor.

My Mother's Sweet Potato Casserole.
Preheat over to 350

5 cups mashed sweet potatoes - About 5 potatoes
4 eggs lightly beaten
1 stick melted butter
⅓ cup brown sugar
⅔ cup Half & Half
1 tsp vanilla
½ tsp cinnamon
½ tsp nutmeg

Roast sweet potatoes in 450 oven. 45-60 minutes.
Let cool and scoop out

Combine everything.

Pour into 9x13 casserole dish that has been sprayed with PAM or buttered

Bake at 350 for 20-30 Minutes.

This sounds similar to ours. The key is that balance between sweet and tart.

Trader Joe's turkey - first voyage with their bird, read great things.
Cornbread stuffing with bacon - COOKED IN THE BIRD
Gravy - generally do this on the grill to get some fresh air and away from the kitchen.
Dinner rolls from Costco - I'll heat them up. 💪

Wife:
Mashed potatoes
Homemade pasta with red sauce from her tomatoes
Some sort of squash, cranberry, brussle sprouts thing she does that's out of sight
Salad with roasted beets, carrots, pomegranate seeds, avocados etc. 10/10 salad

Wife and kids:
Desserts - Lotta little sweets and such instead of a full pie or two. Variety in the offerings; my kids have a bunch of ideas when it comes to sweets.

Sister:
Twice baked potatoes - my dad's special request. One of the few things my mom perfected. Sister does a good job but GAWD I wish she'd make these ahead of time and not ask for precious oven space at the worst time. I think she does this on purpose because it raises my anxiety. Which is why I go outside and make the gravy on my grill. ;)

Yeah, that Chili cookoff cornhole needs to happen. We've been known to do this menu for Friendsgivings in the past too.

Here it is if anyone else in interested:

Cathe's Cajun Stuffing

1 Pound Sausage ( I use Jimmy Dean spicy)

1 Bell Pepper chopped

1 Green Onion (diced and I use the whole bunch)

1 Parsley fresh (Italian aka Flat Leaf)

2 Stalks Of Celery cut lengthwise into 3 sticks (diced)

1/2 Cup Butter small lump

1 Pound Shrimp peeled and de-veined (I like to cut larger shrimp into thirds...they cook faster)

2 3/4 Cups Water Heated To 105F (I use chicken stock....way more flavor...skip water unless you want to be disappointed.....I add more stock as it all comes together to get the right mushyness)

1 Teaspoon Garlic

1/4 Teaspoon Cayenne Pepper or more to taste (we use about 1 T) (I go heavier on the heat)

1 Package Stuffing Mix brown-labelled) (It's just Mrs. O and me so I use half a bag...should be corn bread mix, but you can use what you want)

1 Package Stuffing Mix blue-labelled) (It's just Mrs. O and me so I use half a bag)

Directions:

1. In a large pot or Dutch oven (at least 6-quart),cook the sausage over medium heat until lightly-browned, breaking it up into small pieces.

2. Saute the vegetables in the sausage drippings in the pot with the cooked sausage.

3. The vegetables will brown lightly while the sausage gets browner than it was.

4. Add the butter to the pot and stir the pieces around until they are melted.

5. Add the shrimp and cook for 3 or 4 minutes, stirring constantly.

6. The shrimp should turn pink all over and be done, but just barely done.

7. Break one in half and make sure it is opaque in the center.

8. Turn the heat off, but leave the pot on the burner.

9. Add the 2 3/4 C water, the dried garlic and the cayenne pepper flakes; stir well. (Again, chicken stock)

10. Add both bags of stuffing mix to the liquid mixture.

11. Blend all ingredients together well. Lightly spoon the stuffing mixture into a greased 9" x 14" pan.

12. Bake at 350 degrees F for 15 minutes. Serve at once (with Burgundy mushroom gravy, if desired) (no gravy needed for this one imo)

-homemade rolls, herb whipped butter
-brussels sprouts with bacon and cranberry (this might be my favorite thing on the menu)
-some sort of stuffing my MiL does
-pies - not sure what's arriving, it's another MiL provided course

Homemade gnocchi? Man, that makes me homesick. Every major holiday, my mom made either homemade ravioli or homemade gnocchi (actually, I think they were technically cavatelli) with all the meats in her Sunday gravy: meatballs, hot and sweet sausage, bracciole, chicken, pork bones and even pig knuckles for my old man. On top of the whole turkey and all the sides. Distant family members would start dropping by in October, dropping hints, trying to get an invitation.

Some of my favorite memories are the whole family together days beforehand, stuffing ravioli or rolling goncchi.
 
Turkey and Ham.

Loads of carbohydrates. Mac-n-Cheese, stuffing/dressing, mashed potatoes, sweet potatoes, pasta salad, potato salad,

Deviled eggs. Green bean casserole. Asparagus. Glazed carrots.

Pumpkin, coconut custard, and apple pie

There will be 6 of us for dinner. My MIL will insist on making enough to feed 25.
 
The usual, Turkey and Ham. We are having it on Saturday because that is when all of the kids can make it home. I will put the Turkey in the Brine on Friday. Trying something a little different this year, I usually just to a simple brine of Root Bear and Salt, but Pit Boss had a turkey special with a 5 gallon pail, brine and pellets so I bought one to give it a try. Turkey will go on the Smoker Saturday morning. Also doing Ham, Cheesy Hashbrowns (Wife's specialty and kid's favorite) Green bean Casserole, Mother in law will bring sweet potatoes that nobody eats but she always brings them, Deviled eggs (always a hit) and pistachio pudding. We will have the usual pies for desert and I am sure the wife will make Monster Bars and Sotcheroos for snacks.
 
One of my parents have covid and we've visited everyone a lot recently, so we're just going to stay at home with our 21 month old. Going to do a prime rib (either the classic method posted here or try it on the smoker) along with some cheesy potato dish from costco. Should be fun.

At Thanksgiving I will take my usual plate not overdone, then a few hours later have more. In my 20s and 30s used to pound down 2-3 full plates at one sitting then feel like crap the rest of the day.

Canadian here but we always celebrate American Thanksgiving with my son, his family and a few friends. Going with glazed ham over the usual turkey this year, Manny’s potatoes (wife named them after me), stuffing with hot Italian sausage, glazed carrots, some cranberry sour cream concoction my wife makes and homemade buns … can’t wait!

These menus are top notch and making me hungry!

you come into my house without planning and demand oven time???

Try this from @TheFanatic: Prime Rib. I did this for Christmas last year and it was a huge hit.

Anything you can share on the Cranberry Relish or Sweet Potato Casserole?
Don't have the recipes in front of me, but from memory:

Cranberry Relish:
  • One bag whole cranberries
  • 2 small navel oranges
  • 1/2 cup water
  • 3/4 cup sugar
  • Cinnamon and cloves to taste
In blender/food processor, blend half the water and 1 orange cut in chunks (peel and all) until smooth. Add 1/2 bag cranberries and blend until berries are coarsely blended. Add to a large saucepan. Repeat the process with the other orange, water, cranberries and add to saucepan. Over medium heat, bring cranberry mixture and sugar to a slow boil/simmer until sugar is dissolved and relish becomes dark red. Add maybe 1-2 teaspoons of cinnamon and half that amount of cloves. Allow to cool and put in refrigerator overnight. Also freezes well if you want to make it way in advance.

Sweet Potato Casserole:

  • 2-3 sweet potatoes, enough for 4-5 cups when chopped in ~2 inch cubes
  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1 tsp salt
  • 6 Tbs butter
  • 1/2 cup milk
  • 1/2 tsp vanilla
Boil sweet potato cubes until soft. Drain. In a large bowl, mash potatoes with butter until slightly chunky. Mix in other ingredients until well incorporated. Add to a baking dish and top with the below topping:
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 3 Tbs hardened butter, cut into pats
In a bowl, mix all ingredients and flake hardened butter with a fork until well mixed. Add evenly to the top of the casserole. Bake at 350 for 30 minutes until the top is crusty and bubbling on the edges.

What's your gravy process?
Honestly, the easiest thing in the world, but turns out super tasty.

I roast the turkey with 3-4 cans of chicken broth in the bottom of the roaster. Once the turkey is done, remove any fatty chunks (meaty chunks are fine... in fact I sometimes add meat scraps from the cutting board to the gravy) from the drippings and put the roasting pan right on the cooktop and put the burner on medium. Add garlic powder, salt and pepper to the gravy while continually whisking. I really just eyeball the measurements of those. To thicken, SLOWLY whisk in a slurry of corn starch and water until desired thickness. 👨‍🍳
 
Just the 4 of us this year (me, wife, 10 and 12 year old boys). We are renting a cabin in northern WI for 3 nights (WED, THU, FRI). Very non traditional this year. Lasagna (me), salmon (me), mashed potatoes (12 year old), kale salad (wife), and like 4 pies (10 year old).

Homemade gnocchi? Man, that makes me homesick. Every major holiday, my mom made either homemade ravioli or homemade gnocchi (actually, I think they were technically cavatelli) with all the meats in her Sunday gravy: meatballs, hot and sweet sausage, bracciole, chicken, pork bones and even pig knuckles for my old man. On top of the whole turkey and all the sides. Distant family members would start dropping by in October, dropping hints, trying to get an invitation.

Some of my favorite memories are the whole family together days beforehand, stuffing ravioli or rolling goncchi.
Wife is Italian, so it's authentic. I'm actually not a fan, but the rest of the family loves it.

Mashed spuds, sweet potatoes, mac & cheese, bread, butter and gnocchi? Carb fest... Sounds great but I feel 10lbs heavier just reading it.
Thanksgiving is synonymous with carbs.

One year one of our guests went to the hospital the day after our meal because of severe constipation (they were ok) after they overdid it. My wife was mortified but I told her to wear it as a badge of honor.
This. Food is our entertainment. We all appreciate good food and we're happy to (over)indulge at Thanksgiving.

It's one of only a few things I do well and people appreciate. I'll pat myself on the back here. Jealous?
 
Family recipe that gets tons of love.

Key is not letting them get too done. But still broiling the top so they get a little crispy on top.

Longtable Stuffing Rolls

Makes 20 Rolls.

Foil down on baking sheet. Spray foil with PAM

1 package (14 oz) Pepperidge Farm Cornbread dressing mix
1 package (14 oz) Pepperidge Herb dressing mix (and yes, if roasting your own breadcrumbs and adding spices is your style, do that instead)
32 oz Chicken Broth
2 Onions
1 Bunch Celery
6 Cloves Garlic
2 Sticks Butter Unsalted
4 TBS Chicken Drippings
Maldon Salt Flakes

Mix Dressing in largest Stainless bowl
Heat 1 stick butter until butter melts

Chop 2 medium white onions and 1 bunch celery fine

Sauté in butter until very soft

Add Garlic and saute 30 seconds more.

Add 32 oz Chicken Broth, 1 Stick Butter and 4 TBS Chicken Dripping or 2 TBS Chicken Base until Butter melts


Add to dressing mix and combine in bowl.


Make billiard ball size rolls and place on pan. 4 x 5.

Top with Maldon Salt flakes. These can be done day before and refrigerated.

About an hour before meal, put dressing balls on cookie sheet and bake @ 375 for 45 - 60 minutes.

Get internal temp to 205 degrees

Broil top in last couple of minutes. Watch closely.
 
While very traditional TG meal and similar to mothers listed in here,it is the envy of our extended family. Stuffing and sweet potatoes are the co-stars):
- Butterball turkey, oven cooked, 23# this year
- dressing/w mild sausage cooked inside the turkey
- sweet potato "casserole" but no marshmallows
-fresh green beans with slivered almonds
- cranberries
-mashed potatoes
-rolls
- black/green olives and sweet&hot pickles
- wine chardonnay/pinot noir/prosecco
Use to make a couple cheese balls but everyone fills up on that before the meal.
This year there will be 9 of us.

My wife's family is Italian and we use to have home made lasagna also for TG. We dropped it from the menu about 5 years ago as it was just too much food.

Yep, we used to do green bean casserole, but it was dropped from the menu about 15 years ago, I guess our mom figured we had suffered enough.

I remember you saying that your wife was vegan. How does one make mashed potatoes without a milk/butter/cheese?

Very good question - she'll use vegan butter or oat milk. I doubt there will be any cheese to speak of. :kicksrock:

I don't really mind - I've been toying with her dietary choices the last year or so and it's fine. But I bought REAL Tillamook butter for the cornbread stuffing. I'll be good and damned if I use Vegan butter for my offerings!
 
Turkey - my mom will make this... basic, nothing fancy

Stuffing - nothing wrong with Stove Top, lathered in gravy

Mashed Potatoes - I think we're ordering from Marie Callender's or something... I'm not a huge fan anyways.

Green bean casserole - my wife will make this and it really only gets eaten by her and my mom

Crescent rolls - me and my daughter go to town on these bad boys

Corn - nothing fancy here, just goes good with the turkey and stuffing

and.... for the first time, I'm going to actually try Alton Brown's Mac & Cheese recipe... gotta go get the ingredients after work today

and of course various types of pies... and I'll be drinking some IPAs and munching on cheese & crackers during the Dallas game before dinner
