I agree with the "i'm sure it's fine" line of thinking but that does not make it OK.  If you have to handle cheese, tortillas and lettuce with your gloved hands, you should not be handling any other foods that may get some kind of juice or residue on your gloves.  That's just common sense.  Everyone would be OK with the lettuce having the flavor of carnitas because there is some dried, cold carnitas drippings throughout the lettuce?  That's nasty.  That's another reason why you shouldn't be bouncing around the work line either.  Stay in your spot.  Speedy is only supposed to put rice, beans, veggies and meat on your tortilla or bowl and then pass it down.  That's it.  The next person handles the salsa and other stuff.
Another issue i have is how they put the pinto beans in front of the black beans in the lineup and every time they take a scoop of pinto beans you see the juice drip right into the black bean compartment.  I know that's not a food safety issue, it's just that I don't like pinto beans.  Sometimes you see the black beans and the liquid is not dark, it's light brown due to all of the pinto drips getting in there.  Wish they'd line those up vertically instead of horizontally.  This may be the first change I make when I am chipotle ceo.
