Wow what a difference between these two supposedly same style brews. Where is the Citrus in the *******, and when does the citrus/grapefruit end in the Slam? I once again have to fall back to ol' Bell's on their best brew ever.

Double ******* is not a DIPA. For example, BA lists it as a American Stong Ale.

Well I know what to pay a fool back with... best evahAs for DB not being a DIPA, I thought no way.. thanks for clearing that up for me, as for some reason I thought it was. Guess I coulda looked it up before opening my mouth.

Drinking a Highland Cold Mountain Ale. Its a spiced holiday ale, resembling some pumpkin ales but with other spices and a bit of vanilla. Good, but I think it could benefit from having a little bit more alcohol to give it that nice warming sensation. Really popular down here and sells out in a matter of days.

I need to know what beers should be drank asap.

I have way to many brews right now and want to work my cellar to it's best advantage.

I have 2 cases of hopslam and 1 of Oberon. I am sure the Oberon won't last long, so I think that is one brew I better start polishing off. What about IPAs? DIPA? I have some stouts and others that I sure will do well, but these are what I worry about the most. Anyone have suggestions on each of these varieties?

If so, I am in deep trouble... lots of these floating around down there. Someone better send me a shipment so I can send some of these out.

You are correct sir. I wouldn't want to keep most of them past 6 months. If you keep them in the fridge, that will prolong how long they last as the colder temp ####### the aging.ETA - GDB not being able to use the word ####### even when using a different meaning than "mentally challenged". Damn JB.

Sipping on a Pisgah Baptista. Holy moly, who would have guessed that an organic brewery started by two desk jockeys that moved up here from SC could make such a splendid rendition of a Belgian strong dark ale. This beer still needs to warm up, but if you told me that this was from Belgium I wouldn't argue with you. Bready, fruity, with plenty of dark candy sugar to give it an alcohol kick. I am pissed though that there was a 2 bottle limit at the beer store as this beer was made in such a small quantity. I think I am going to take some of the afternoon off tomorrow to run by the brewery to see if they have any more.

We need pics for this?Cellaring is good on most higher alcohol beers (8 percent or so and above), especially those with strong hops and or malt character. Imperial Stouts and barleywines do particularly well.

I was just told that DIPAs will lose their hopiness.. high in alcohol and high in hops.. this is why I figured the pics were necessary

Go ahead and post the pics, but higher alcohol will let any beer age to some degree. Yes, the hops over time lose some of their flavor, but it is replaced by some interesting notes in the malt that may not have been present before.
