Yummy!
First time I had it was on a business trip to Costa Rica. I didn't speak too much Spanish and one of the guys I was with had been living there for our organization on and off for a couple years, and the third, a consultant, was a native speaker. We sat down at the table and the waiter recognized our guy and walked over with a pair of beers, and asked us what we wanted to drink. Nice place! They started to order and I was lost. The ceviche came and they said try it, don't ask what it is just try it we'll tell you later. I said OK what the hell, and it was spectacular. Then they said I was eating uncooked shrimp. After getting a laugh at my reaction - Having grown up near the ocean and eating raw shellfish (clams, oysters) it was no big deal, but I always thought shrimp wasn't something you didn't eat raw! They explained how it was made (cooked using the acids in lemon and lime juices) and I continued to eat it, been a huge fan ever since!
