Avocado Toast (1 Viewer)

I love it when making it at home. A nice hearty piece of toast, smashed avocado, sea salt, red pepper flakes. Every now and then, throw a sunny side up egg on it. Pure heaven.

People paying $8+ for this at a restaurant or coffee shop are pure morons though. 

 
My wife makes an avocado curry toast.  It's just mashed avocado with curry powder, salt and lemon on top of sourdough toast.  Really good.

I mean, isn't a single avocado like $5 anyway?

 
Love it.

Two Healthnut slices of bread toasted medium brown.  Mash one half on each.  

Sprinkle with kosher salt or salt flakes and some pepper.  

 
I like it with either a slice of tomato and salt or I’ll slice up a hard boiled egg and place on top of the avocado. Super good—but much better to make at home than it is to spend $7-$10 for at a restaurant. 

 
Toast, smashed avocado and arugula with a lemon vinaigrette  and a sunny side up egg.  I think I know what I am having for dinner.   

 
Sourdough, little salt and pepper directly on the avocado, arugula, sliced tomato and one piece of bacon on mine. Delicious.

I like it with a fried egg on top.  So good.

And I thought restaurant prices were crazy for it as well until my wife ordered one and I tried it.  Not sure what kind of voodoo they did with it but it was amazing.

 
While we're on topic somewhat, and I see people talking about including an egg -- I recently discovered the goodness of avocado egg boats.   They're great and a really good low carb (no bread, carbs only from avacados) breakfast.  Or Dinner. 

Preheat oven to 400

Take a large avacado, half and pit it.   Scoop out a very small additional amount of avocado from each half, around the pit dimple.   2 eggs -- Crack an egg and put one in the pithole of each half.    Bake for about 15 mins.   Add chives, salt and pepper out of the oven.   :drive:
