He played very well in Denver. They wanted a mobile QB which Griese isnt. Also Griese had injuries to his throwing shoulder and his leadership was questioned while in Denver. It was the combination of his lack of mobility, injury, and a locker room dispute. He was recovering from those injuries when he went to Miami. He didnt get the healthy practice time he needed in Miami and he didnt fit the system they wanted to run either anyway. He's a west coast type QB who isnt mobile. When healthy, he has always played well in a short passing system. Leadership is something that often improves with age. I dont give up on a QB who is thrown into a starting role as a rookie and benched for lack of leadership. He's not the youngster he was in Denver anymore. Chicago doesnt have to "mentor" him. The throwing arm seems like it finally healed well enough. Mobility will always be an issue but a lot of good QBs have the same issue. Griese is a good QB but he doesnt fit every system. I thought Griese and Brees were the two best fits for Chicago. Just like I thought Brooks and Culpepper were the two best fits for Oakland.

Passer rating in Denver was 84.3
(Passer rating in Miami was 69.2 but he only played 5 games)
Passer rating during his Gruden tenure was 91.4.
Thats not exactly a startling improvement under Gruden- in fact if we expect Griese to improve as he got older its probably a wash.
"Who would be mentoring him in Chicago, in place of Gruden?"
The guy is 31 years old, if he still needs mentoring he's got a bigger problem.
No one is expecting Griese to be a world beater on the Bears, heck he wasnt even brought in to start. But his lifetime numbers are better than a Gus Frerotte and about equivalent to Brad Johnson. The guy is pretty much perfect for the role he was brought in for- a veteran backup, and they didnt have to overpay for him. The bottom line is there arent many teams in the league that have a backup QB as proven as Griese. He may be questionable as starting material, but as a backup he is excellent.
