I think teams having their seed locked up before week 17 is pretty rare. Was that even the case for any team this year?

Nope

But I do remember it was a thing for at least one of the Dungy-Manning Colts season

I remember that. They were even undefeated at 14-0 but still didn't go for it.

Nothing stopping anyone from shifting their Championship game to week 16.

i can think of something stopping it. 6 team playoffs means three rounds. if ship is in week 16 first round is in week 14. players have byes in week 14
