The bed is hard as a rock.
or
The bed is as hard as a rock.

Which one is correct?
Which one sounds/reads best?

 
I think the sounds/reads like question could be separated and probably get different results. 

Sounds best. And likely how the majority of people speak the sentence: The bed is hard as a rock.

Reads best and is grammatically correct: The bed is as hard as a rock.

Like overuse of "that", the word "as" can be thrown out in this scenario without losing any meaning.  I voted "The bed is hard as a rock" for both.

Grammar as a self-aggrandizing thing is useless.  If the meaning is clear and maintains a useful organized structure I'm all for it.

The phrase "is hard as a rock" works perfectly as a stand alone simile and doesn't need the extra "as".  In fact, why use the first as?  "The bed is hard" is what you are stating, so why the need to throw "as" in there?  Completely unnecessary.

Because it's a simile. 

 
FWIW, "the bed is rock hard" is probably my preferred way to say the phrase. But if you're using the comparison and creating a simile, then an "as" needs to be included.

That's called parallelism, actually, and would be stylistically correct. 

As for the OP, it's the whole shebang. This bed is as hard as a rock is grammatically correct. You don't omit words in formal English.
