Healthy eating on a budget (1 Viewer)

Good thread, but I think your prices are low for most areas of the US. Good luck getting blueberries for 1.99/pint in most places.

And I think you need more protein in your diet. Chicken is relatively cheap....especially when purchased frozen and in bulk.
I just bought 20 pints of fresh blueberries on sale at Kroger last week for 1.49 a pint. Divided them up in freezer bags of 4lbs a bag. I go through a 4lb bag a month.

This is the easiest time of the year to eat good. Been doing tons of grilled veggies like zucchini this summer.
Blueberries dropped to $0.99 at Aldi last week here. I bought a couple dozen and have them in my garage freezer. Our monthly food budget is a variable $700 for my wife, a 4 year old, 2 year old, and I. I used to personal train, and still work with a few people, that pay cash only. We add whatever I make to the food budget. Start every month with $500 then add part of my personal training earnings.

Breakfast - oatmeal, banana, bagel. I can find each of those components for less than $0.15 per. Costco, Aldi, and Entemann's outlet respectively.

Pre workout - Spinach. We try to buy spinach when it's bogo ($2 per bag) and freeze one. Each lasts more than a week usually.

Post workout - Protein shake. Used to make my own, but now that I workout over lunch that doesn't work. The Costco stuff is like $1.25 per, but I've gotten it on sale for < $1 per before.

Lunch - sandwich (usually turkey or tuna), veggies + hummus. Veggie is usually cucumber or celery. Two cucumbers and a bundle of celery runs me about $2 at Aldi and it lasts a week. I always add spinach, tomato, and some kind of onion to my sandwich, regardless of what it is. Turkey is $2.99/pound at the deli and a 1/2 lb lasts me a week. Tuna varies, but can usually find it for < $1 per. We grow our own tomatoes (cheap!), but there's probably a more cost effective way for us to get onions. I usually just buy one ($1+) whenever we run out of one. Definitely is with hummus, but $6 at Costco for a tub that lasts me a month? That's fine. Because of the Entemann's outlet all of our bread is a $1 per, try to buy the good stuff right after it goes on the shelf then freeze for later use. Get a freebie with each purchase too and they usually have something we plan to use anyway.

Afternoon snack - cottage cheese, fruit. Right now fruit is blueberries because of the above. Tub of cottage cheese is like $6 at Costco, lasts me a couple weeks.

Haven't ever figured out exact cost of everything I eat during the work day, but it's probably less than whatever my co-workers spend on lunch. My wife is not as cost conscious with her at-work food budget, but she's pretty good too. She eats a few more grab and go things like nutrigrain bars and trail mix.

We spend our savings on alcohol and good meat and we try to end each month in the black by $100, so we can go out for a nice meal.
When you say protein shake, do you mean a scoop of whey protein powder (for example) in a shaker cup with water or milk?

If anyone has a good hummus recipe they came up with please post it.
All you really need is chickpeas (15oz can), tahini (1/4C) and lemon juice (1/4C). After that, its just a matter of preference (or what you have on hand). Look at the pre-made stuff if you need inspiration / ideas.

Cant imagine how much money we're saved over the last 5 years or so making our own rather than buying pre-made. We eat a ton of it.
I like just about any flavor so I wanted an fbg exclusive recipe to try

Do you mash by hand or use a processor?

I use a food processor and make 6 cans at a time (freeze half). I like fresh garlic, salt, mexican oregano and toasted cumin seeds (ground with a mortar and pestle). I make a hole in the middle and fill with roasted red peppers and then drizzle chipotle infused olive oil over the whole thing. Or, if you dont have a kitchen, you could just mash a can by hand and add a tablespoon of taco seasoning instead.

Eating healthy with $200/month shouldn't be that hard.

Sample day:

Breakfast - oatmeal with cranberries and milk (pretty much every day for me)

Lunch - a couple of tuna fish sandwiches with or without baby arugula

Dinner - some chicken thighs (like these way better than breasts - you can live with a little fat), jasmin rice and frozen kale (love this stuff)

Snack - apple

Snack - yogurt

Throw in whatever you want for snack, but those are some of my staple meals. I love jasmine. That stuff is insanely easy to cook in 15 minutes. Just buy it in bulk from costco.

That should cost about 7 bucks for the day.
I was to convey that it shouldnt be hard, but many people do find it hard because they cant get over the feeling that they have to stuff themselves.
When it comes to personal finance and healthy eating, I have little in common with the general public. Eating healthy kind of sucks, but if you want to look and feel good, you find a routine that works for you and you stick with it. If the goal is to eat healthy for $200/month, its financially not hard to do. Other than the Kale, I buy everything from costco.
It was hard at first but now if I eat anything processed or unhealthy I get ill. This weekend I ate a burger at a BBQ and I had to run inside to throw up. The smell or even sight of fried food makes me nautious. If you stick with it long enough ypur whole system changes and you start craving vegetables instead of bacon or cheetos.

On that thought, why dont they make bacon cheddar cheetos?
Good god. I'm not sure if that's a good thing or not. I just had two angus burgers for lunch. I buy them frozen from costcos. Very tasty burgers. They come out to about a dollar a pop.
That's a hell of a 1,000 calorie lunch.

Im going to try that or just use garlic, turmeric, paprika and tarragon. I always keep those on hand and put them in just about everything

Two.

Damn I need to find an Aldi. They take EBT?
No clue, I know they don't do credit, but don't know about other options. We usually go there first to see what's cheap AND good. Then we move on to the next store.

What's weird is how everything there is cheaper except for meat. I don't think I've ever bought anything meat in the 4 years I've been shopping there.

Its actually two lunches. I never eat just one lunch. Did you know that each burger is exactly 500 calories or were you just guessing?

This one in vanilla - http://images.costco.com/image/media/500-857765-847__1.jpg

When I used to make my own I'd blend up a scoop of whey, ice, water, and whatever cheap fruit I have lying around. Since I changed to store bought I moved the fruit to the afternoon snack with cottage cheese.

Q. What forms of payment are accepted at ALDI stores?

A. We accept cash, PIN-based debit cards, the Electronic Benefits Transfer (EBT) and Link cards. At this time we do not accept checks, credit cards or the Women, Infants and Children program (WIC).

Thanks. I'll have to look for those on my next Costco trip. I've been buying the powder and it is fine if I can be around a fridge to store some milk in there. Otherwise I have to add water to it. Then it is kind of :yuck:

Im going to try that or just use garlic, turmeric, paprika and tarragon. I always keep those on hand and put them in just about everything
Got to remember this for later

Stone cut oats are worth the price difference over quick oats.
They didnt have a big container of sterl cut and only quaker brand but im probably going to try them next time
I've been buying a small packet for 4, lasts me a couple weeks as I only eat it every other day or so.
Ive heard they are more nutritious but for $6 and half the size of the generic large onr I always passed

Buying pre-made humus is like lighting your hand-rolled smokes with Benjamins. You dont really need a kitchen to make it either. Hell, you could mash it up in a bowl with a fork if you wanted.
You are right. Im going to start making it. Im going to look for a cheap little food processor or just get a potato masher and do it in a bowl.
Homemade hummus tastes way better than any store-bought brand that I've found.

If you can't cook, you'll have to use canned garbanzo beans instead of dried. I've never done it with canned, but I know some people who say they're just as good, or nearly so.

Get a mortar and pestle. It'll be useful for lots of stuff besides just hummus. You'll be able to make an awesome caesar salad dressing, for example, using the mortar to turn the garlic cloves and anchovies into paste. (A food processor makes emulsifying the olive oil a lot easier, but you can do it by hand with a whisk and some elbow grease.)

You can also make ridiculously good guacamole with it. Or any kind of nut butter. Or basil pesto (although that usually goes on something cooked).

A food processor works for most of that stuff as well, but it's less fun.

Im going to check amazong since ive always wanted a mortar and pestle

Solid list.

FYI Kefir is not a good source of protein and is generally overloaded with sugar.
I started drinking it a few months ago for the probiotics because I was having some constipation problems. Npw that I drink it with my high fiber diet I go about 6 times a day. I dont know if thats too much. Im also exceptionally gassy but the farts dont smell at all.

F that. We're on a budget here. Costco has a huge box of quaker oats for a couple of bucks more than that. You need to be thinking bulk. You can sacrifice a little nutrition. You're eating healthy enough as it is.

I started drinking it a few months ago for the probiotics because I was having some constipation problems. Npw that I drink it with my high fiber diet I go about 6 times a day. I dont know if thats too much. Im also exceptionally gassy but the farts dont smell at all.
You eat that oatmeal every morning for breakfast and those constipation problems will go right down the toilet.

No pun intended right? Lol

Actually just started buying oatmeal a month ago. I really dont like it but when I was a kid I liked the maple and raisin. I figured it was worth it to buy the real maple syrup for some flavor instead of a bottle of maple flavored HFCS.

Its a real nuisance having to go #2 so often. When im working I may have to mix some immodium in to the oatmeal because I dont want to crap my pants on the road

Its really hard every day to not just drink the maple syrup straight. Its so damn delicious. If there is a heaven I imagine that is what it tastes like.

Good god son, this isn't some laxative. How were you constipated? A cup of oats isn't going to make you go from constipated to crapping yourself. You using milk instead of water? I don't know how people eat oatmeal with water. I like my oatmeal runny and I let the cranberries soak in the oatmeal for over an hour. The cranberries then absorb some of the milk which makes them juicier. Get yourself a nice big bag of cranberries or raisins from you guessed it, costco.

I put a little hot water to soften them up and add maple, raisins and almond milk. I started going to the bathroom a lot months ago when I cut out refined breads. I was having trouble digesting it.

Its not like I have diarrhea every day. It just comes out with the slightest push. Like childten shooting out of the tubes at action park

TMI - see my earlier post. What is this "working" you speak of?

Can't come up with any suggestions that don't require cooking.

Stove-top (Mostly): After a lot of trial and a whole lot of errors, I finally figured out how to make the world's finest pot of ratatouille. I prepare it in very large batches and freeze most of it. It's a veritable cornucopia of vegetables. I once busted out the arithmetic skills and determined that I could make six 250 calorie bowls for $12, and that includes $5.50 4-pack of Aidell's chicken and apple sausage. Throw in a $2 loaf of "artisan" bread (broiled with olive oil and garlic salt) found on the bargain bin in the back of the grocery store and you've got a filling, lo-cal meal filled with fresh vegetables.

Oven: Just roast vegetables - tomatoes, potatoes, red bells, squash, zucchini. Top with a little feta.

Oven: Baked potato ... Google the potato diet for some interesting contrast to what you usually encounter when reading diet lit.

Oven: Baked sweet potato. It's very odd I know, but I like to top with butter and kalamata olives.

Oven (mostly): Bake fresh corn tortillas at 400 for 10 minutes; top with refried beans and sliced avocado. Helpful hint - dump refried beans into sauce pan, stir in water to thin, and heat on stove top. Makes a huge difference to air'em out like this.

Stove-top: Steam broccoli and sausage link of your choice for about six minutes. Again I typically go with Aidell's chicken and sausage. I eat a bunch of them - good way to control portion size and sorta force me to bulk up on on vegetable portions.

Other tips: Your mileage may vary but I've noticed my local produce sells a few items on the cheap - Red Bells at $0.99 each (fragrant red bells, not the plasticized crap at Big Grocery); 8 oz portobello for $1.99 (not really cheap but regularly beats BG by 50 cents).

Unsure, but it seems like the "Oh ####, this product is about to go out of date" steep mark downs are more prevalent after 8:00 pm.

Remember when you were a kid a kid and you had a play-doh factory? If you put the plastic star shape and pressed the lever really fast and it came out looking like churros?Thats exactly what it looks like

I tried for years to like steel cut oats. Just terrible stuff in my opinion. Oat Bran on the other hand with a little salt, butter and cinnamon is very delicious, and it takes only 2-3 minutes to cook on the stove top.
