In a workday lunch rut. Sick of spending too much money on fast food crap. Trying to get healthier too.

What are you guys brining to the office for lunch? I'm in an office and have a basic kitchen.

Also, I have this amazing gizmo which reheats leftovers amazingly.

Send over ideas! I need them
 
Cheese or lebanon baloney or chicken thighs
fresh celery or bell peppers or carrots
fresh berries or bartlet pear or royal gala apple
granola bar

My lunch for years at work.
 
I ride the struggle bus on this subject as well.

You don't want something too heavy(leftover pasta for example), or the strong urge to take a nap under your desk at 2 o'clock hits. On the other end, you won't survive the workday on a couple of carrot sticks and an apple. Protein and veggies, and ignore the brain when it says it wants carbs(bread, pasta, rice, potato, etc.).

With leftover chicken, you can whip together a chicken salad the night before. Follow that up with some steamed veggies.

A big salad is great. You can use romaine lettuce and leftover chicken for a good caesar salad.

I like to make a big pot of hearty soup(lots of proteins and veggies in a thicker broth). That usually lasts a few days.

Chili
Grilled chicken and potatoes
Salad with grilled chicken
Mac and cheese
Etc.

Make an extra baked potato when you cook. Think lunches as you are making dinner.

One of those things is not the food of a guy living in northern WI……

However, let me amend this...

If your job is a very active job, potatoes and pasta are great. If you work sitting behind a desk, carbs are your enemy!

My mom used to do this. I had the best school lunches. Chicken breast cooked in cream of mushroom soup was a favorite.

This looks like the recipe. It couldn't possibly be easier.

I had to invent my own chicken salad since I don't really like the usual stuff. I took a can of premium chunk chicken breast, mashed it a bowl with just enough mayo to keep it nicely together. Then I added salt, pepper, and paprika to taste. (I really like paprika.) You could put that in a container the night before and the bread in a sandwich bag for assembly at work. I make egg salad the same way plus a bit of lemon juice. Same idea for tuna salad (minus the paprika).
 
Agree 100% with ChiefD.
Nothing better than leftovers for lunch.

Some of our rotation:
Spaghetti
Swedish Meatballs
Grilled Pork Loin
Tacos

In between I'll sprinkle in leftover pizza and make a ham sandwich, egg salad or even PB&J or PB & banana on occasion.
 
If I don't bring something in, my easy go to meal is to hit the local grocery store and grab a Rotisserie chicken and a couple frozen steamable broccoli and rice packets. You can get two meals from the chicken breasts/veggie packets and have some dark meat leftovers.

Chicken $9 bucks
Frozen veggies 2 for $5 or 3 bucks each.
Getting two plus healthier meals for about 7-8 bucks each.
 
Rice Bowls are easy.

Rice, protein of choice if you like. Grilled Chicken, Shrimp, Beef whatever you like.

Some sort of vegetable.

Super easy.

I used to do this until my son turned about 9. Now he's a teenager and eats 5 portions instead of 2
 
Remembered this thread from awhile back. I enjoyed the avocado chicken salad sandwich in there, and had been thinking about it again recently.

 
I usually grill up some chicken breasts on Sunday and use the leftovers in salads throughout the week. Change up the dressing each day to provide a little variety. I usually also have an apple, a stick of string cheese, and maybe a granola bar.
 
Remembered this thread from awhile back. I enjoyed the avocado chicken salad sandwich in there, and had been thinking about it again recently.

Roasting a whole chicken is so easy and is in my opinion superior to the Rotisserie chickens you get at the stores or discount clubs.

Super easy and can provide protien for multiple meals through the week. Rice Bowls / Salads / Main dish etc.
 
My bargain with myself for a 5 day workweek is 1 Chipotle trip, 1 pizza slice from my favorite spot, and 3 meals from/at home. Lots of leftovers- tacos, grilled chops, stir fry, instapot orange chicken or birria. Individual microwaveable rice cups help. A decent amount of soup outside of summer…nectarines in summer and apples in the off-season.

You can take pretty much anything. I'm sometimes amazed at what I see other people eating in the break room. I'm just sandwich guy myself. I eat this pretty much every day:

  • Apple
  • Shukewich™
  • Pretzels
  • Rotating fruit. Currently 3 kiwis with skin on
