Sounds like an awesome time to me, GB! Glad you had fun and yeah, you'll be back!
The In-N-Out in Grants' Pass gets far less traffic than the one closer to Portland in Keizer. That one always has a long long line. Always.
pFreim is awesome, man. They make incredible beers and that spot next to the Columbia is really cool. One of the only places around that serves poutine.
Silver Falls (assuming that's what you meant) is really tough to pull off unless it's your stated destination for the day. Why? Because if you REALLY want to do it right, you take the Trail of 10 Falls which will take you 3-4 hours to complete, but totally worth it and would need to be it's own day, really.
The coast - you nailed it man. It's where the forest meets the sea/ocean and I don't know too many spots like it in the world where you have majestic views of the ocean on one side and splendid, deep forest on the other. Incredible hiking all along the way, whether you want to hike high for the views or hike down to secluded parts along the Pacific that are only accessible by foot, the Oregon Coast is a unique treasure.
How cold was the lake? My wife jumped in once years ago and this Michigan gal said it was the coldest her body had ever been.
