Punt e Mes is what I use as my sweet vermouth. The body and sweetness of a quality vermouth but a nice bitter structure like an amaro. All I pour for sweet vermouth as it walks the line as a sweet vermouth/amaro, it can handle a bold spirit cocktail. I love the stuff!
Yeah punt e mes is good stuff, I just have a hard time justifying the price

Anyone have any good holiday drinks, bottles, etc in the works for the season?

I love Manhattans and this time of year I like using black walnut bitters

 
I discovered once that carbonated lemon soda mixed with brandy tastes exactly like Dr. Pepper.  Have experienced difficulties replicating since then (Full disclosure, I'm a rube).

How long until it goes bad?
Theoretically Vermouth never goes bad, unlike Sherry or Port. I once heard it was because it was "fortified" but have no idea what that means or whether it is true. I will say that I have on occasion made great dry martinis with vermouth that had been open for a couple of years

Vermouth definitely can't be stored indefinitely.  And it should be stored in the fridge after opened.  Like any wine, oxidation blunts the flavors, so it's best to buy smaller bottles more often.  It's not like it will taste awful, but you'll notice that your two month vermouth just doesn't have the same oomph as when you opened it.

It's not that I use very much in my dry martinis....

 
What's a good large batch cocktail for a holiday party?  We have about 20 people coming over Saturday and I like to have a pitcher mixed for easy deployment.

Christmas Spiced Rum Punch (always a big hit)

- Spiced Rum

- 100% Cranberry Juice 

- Ginger Beer

- Orange Slices

- Fresh Cranberries

- Mint Sprig

I use a 1 to 1 ratio on the Rum/Juice and 1 to 1/2 on the Ginger Beer

Add a few slices of orange , a couple handfuls of fresh cranberries and some mint to the pitcher. Either chill it or add ice if you don't mind it diluted

Grasshopper

1 part Creme de Menthe (green)

1 part Creme de Cocoa (clear)

1-2 parts half and half (or heavy cream if you want creamier)

shake

If you want to get fancy squirt a little chocolate sauce around the inside of the glass before pouring

 
I came up with one recently that was really popular at my family gathering.

1 part ginger-infused maple syrup (slice up 1 oz ginger root per cup of syrup, simmer about 10 minutes, cool)

2 parts unsweetened cranberry juice

4 parts bourbon

Serve over ice with a couple dashes of bitters (orange or Angostura).  You could dilute with club soda if you want it less boozy.

ETA - you can also pre-mix the syrup and cranberry, and then mix 1.5 oz of that with 2 oz of bourbon for individual cocktails.

Anyone doing Sous Vide infused liquors?  Getting ready to do a few this weekend including pineapple vodka, lemon vodka, jalapeno vodka and luxardo cherry bourbon 

 
Umami isn't something I'd associate with the flavor profile of bourbon.

I think it would work better with a more neutral liquor like vodka or soju.
Honestly anything infused with seaweed sounds horrible to me as I'm not a fan but bourbon in particular just makes me :X

 
Recipes?  My aunt gave me a bottle of champagne as a Christmas gift for some reason.
In a champagne flute, I added a sugar cube, wet it with a couple dashes of orange bitters and then a 3/4 ounces of brandy.

For garnish I also added a cocktail cherry and orange peel.

Then I fill the flute to the top with champagne. I often find I still need to stir it a bit to dissolve the sugar.

 
Made these the other night for a holiday party, both seemed to be hits:

"Trade War" (on the spicier side)

2oz Bourbon

1oz (or as desired) simple syrup infused w/ Chinese 5-spice

2 dash orange bitters, squeeze of meyer lemon wedge

Garnish w/ dried cinnamon stick + star anise, ice cube

"Down Dog"

2oz Rye

1oz (or as desired) simple syrup infused w/chai tea

2 dash orange bitters

Garnish w/ orange peel and sprig of fresh thyme, ice cube

Yeah, give it a go and see what you think.  I found it necessary to pass my 5-spice simple syrup through a mesh strainer to get the larger spice pieces out before preparing the cocktails.  Cleaner look.  Enjoy ✌️

This is readily available near me and Eephus - Oakland Spirits Company’s Sea Gin. It’s awesome. Great enhancement to a gin martini, tonic, etc. Their Automatic Gin is incredible as well.

 I'm basically 'steeping' the desired ingredient into prepared simple syrup to give it a different flavor.

So usually I use a 1:1 ratio of water to sugar to make the simple syrup (https://www.liquor.com/recipes/simple-syrup/#gs.oam6pc).

After the SS is done and cooling, I steep the chai tea bags (or chilis, coffee, etc. ... whatever you're making).

For the 5-spice idea I just mixed a tablespoon directly into it which resulted in it being a bit too grainy, so I strained it before serving.

Made some Paper Planes yesterday but subbed in Vecchio Amaro del Capo Riserva. I didn’t think the Paper Plane could get any better but I believe that with this Amaro, it did get better

Don't get a spiced rum, they are hard to use for anything else than Cuba Libre's

Ended up just getting Krakken, which they had so much booze they didn't even...um...Krack open.  Ha.

Anyway, no need to worry about being classy enough.  The dude with the long man perm and mustache brought a half-full bottle of Sailor Jerry's and drank it neat from a small glass all night.  Then got in his car to drive home.  Hope he made it.

Long man perm people are the worst. That said, I'll go make myself a Cuba Libre ;)

Kraken is the go to rum for my wife and I, though we both only ever drink rum in a mixed drink. 

 
I could use something unique tonight after a tough week. Whiskey, gin, mezcal, tequila in play. Throw something at me. 

 
 The trickier part is that other ingredients. What fruits, vermouths, bitters, etc. 
Pretty full bar. Most herbals, bitters, etc represented. Lemons, limes, oranges.
