In a professional setting, young women "ma'am" and old women "miss". Similar to telling pretty women they're smart and smart women they're pretty.

Pro tip, they will most likely prefer to be called miss (can't speak for the southerners where it appears to be standard).  From those who I have talked to, ma'am makes them feel old.  I always use miss.

Really, I always use Miss.   But in the south that is common place especially with the first name.   Hi Miss Megan, Hi Miss Brenda, etc.

This is how my kids always referred to their daycare providers.  Miss Lori etc...
