Ordered a porterhouse medium w/pink center @ Capital Grill over the weekend. Came to me charred, tips gray with thickest parts of strip part and tenderloin part pink as ordered in center.

Didn't send back and was still good overall, but was kind of disappointed since I've had porterhouse at Capital Grill before and it was nothing short of excellent.

Didn't want to be "that guy" sending it back. Feel like it was the right play, just might pick another restaurant for a nice once-in-a-while pricey steak.
The one in KOP? I've only been there once but was not impressed. Not saying it's not good, but just didn't have a good experience there. First, our reservation was for like 7 and we got sat around 8:30. Not a big deal, we drank in the bar and time went by quick. I ordered my steak medium. When I got my steak, I cut into it and it was barely rare. I'm not sure if it saw a flame for longer than 20 seconds. Normally, I just eat food and don't say anything, but it was way too rare.

I told the waitress and she said, "Actually, rare is going to be pink throughout." Still being very nice, not wanting to cause a scene, I said, "I get that. But this thing is raw." She took the steak back and I got to watch everyone else eat as I waited on mine. When it came back out it was almost well done. Apparently the cook wasn't happy with me sending it back. She asked how it was and I said, "It's over cooked, but that's fine." I ate it because I didn't want to wait anymore.

A manager came by later and asked how everything was. I told her what happened and she said something like, "Oh. I'm sorry things didn't turn out for you."

We got the bill and they made no attempt to even take a couple bucks off the bill. I didn't ask them to, but I was amazed nothing was offered. For the money you pay at that place, the meal should be perfect.

 
If there is really a problem with ow your food is cooked, and you aren't in some dive, then there probably isn't going to be a problem. It's when you are an ### for no reason that food issues start to become a real worry.

Cooks have to deal with enough cases of "That guy" on a daily basis... they're not going to screw with a meal when you have a legit gripe.

Ive eaten at CapGrill in Orlando several times and was always impressed with the meal. Agreed 1000% that is completely unacceptable... particularly at an establishment like that. :thumbdown:

If you're paying $100+/head for dinner... part of that is for the expectation that things will go down damn near perfectly.

In NYC at a nice steakhouse, I'm sure plenty go back daily and it is never an issue.These people are paid well and I'm sure they aren't jeopardizing their job bc a steak went back.

When I worked in a restaurant it was only an issue when they ate 3/4 of the steak before saying anything. Happened once a day.

 
It is tastes good I just eat it. Most better steakhouses like Ruth Chris usually slightly undercook instead of overcook.

I was at Outback a couple of weeks ago and ordered a filet medium rare. Came out more medium to medium well but tasted good. The waitress right away looked ay my steak and said she would get me another one. I tell her it tasted fine and to let it go. The female manager comes over and says she put another filet on the grill for me. I tell her no worries this one is good, she says OK you can Eat your meal and I will comp it and you can take the new steak home with a salad and 2 sides for free to eat for lunch tomorrow. Thought that was pretty nice of her.
I was at a Longhorn a couple of months back and ordered a medium sirloin. Before they even brought it out, they came out and apologized and said they had overcooked it. They said they would bring it out, but they were going to put a new one on. Normally I would roll with it, but this thing was badly overdone. I ate the potato while they cooked a new one, then brought me a new steak and potato and comped the whole thing. I was impressed.

When I worked in a restaurant it was only an issue when they ate 3/4 of the steak before saying anything. Happened once a day.
Yea, that person is an #######... At Del Frisco's they actually have you cut the steak with them there and ask if it is to your liking.

Yea, that person is an #######... At Del Frisco's they actually have you cut the steak with them there and ask if it is to your liking.
When that person pulled that I knew I wasnt getting a tip so I just called my manager over to handle it. Everyone hated him and it was enjoyable to watch him come close to an anuerysm argueing with those people.

Watching him get so aggravated was the least I could get when not getting tipped

In an expensive steakhouse, if you cut it open and it is well and you ordered medium rare there is no reason to not ask for a new one... Never, not a single time has there been a situation where they weren't apologetic and sent me a new one cooked to my liking.

I had a friend that worked in a steak restaurant. He confirmed that anyone that ordered a steak well done didn't get the freshest steak. He also said that someone once ordered a $100+ Kobe/Wagyu (something of that stature) well done. They served him something similar, but not that steak. The chef said that anyone who would order that well done wouldn't know the difference. :lmao: It's a pretty well known steak place in SD too.

 
I've sent a piece of prime rib back once. I only like beef rare to medium rare, and the piece I got was cooked through. Was at late lunch with wife and Mom for Mother's Day.

They took it back, by the time they came back out with a new piece everyone else had finished eating- and the new piece of prime rib was again cooked all the way through.

Wife and Mom got to sit and watch me try to choke down a nasty piece of well done prime rib.

I voted just eat it but talk to table about it, but I could also be under a "don't go out enough to notice or make a big deal" type category. I'm sure I'd just be happy being out having a good time. Either way I'm sure it'd be better than I could cook it.

truth be told, if the steak I'm eating doesn't come the way I wanted it, it's my own fault because I cooked it.

I always oder med rare. I can live with undercooked but overcooked ruins the steak. It goes back.

I realize things happen and over cooking something happens.....even though I have it almost down to a science on my home grill, it can still happen....

but if you aren't going to bring it to me the way I ordered it....why even ask.....just bring it to me however you want......

undercooked a little fine.....but no way I want it over cooked....

 
Sent one back last night. I ordered medium rare (told the waitress I would accept rare), and it came out medium. She acted right away and steak came out in five min perfectly cooked.

 
Depends, I order medium rare, but will just eat if it's rare or medium. Anything further in either direction and I send it back.

I cut it open and take one bite. If I like the way it tastes I keep it. If I don't back ya go and make it the way I ordered it.

$25 dollar steak? Better taste the way I want it. I order medium rare, typically it comes out that way but every now and then it does come out medium. depending on the cut It will be fine (a rib-eye for example tastes great both medium rare and medium) but a sirloin or strip? I want it a true medium rare. A filet also must be cooked exactly the way I want it. Rib-Eye's have the most flexibility for me due to the amount of fat and especially if it is a bone-in the flavor is really nice. So I can accept a slight over cook on that cut.

I ate there once for an anniversary dinner and I agree. The food was outstanding. My only complaint (and it's not even really a complaint) was the amount of noise in that place. It was so loud with people, I thought I was in a busy train station. It was around Christmas and there were lots of small business parties going on. So maybe we just were there at a bad night.

When I lived in Houston, we used to go to Kirby's in The Woodlands all of the time. My favorite steak place anywhere, hands down. That place has more of a quiet, fine dinning atmosphere.

That said, Sullivan's was still pretty awesome.

We got the bill and they made no attempt to even take a couple bucks off the bill. I didn't ask them to, but I was amazed nothing was offered. For the money you pay at that place, the meal should be perfect.

Sheik, yep Capital Grill in KOP. Wow, I mean this franchise seems to be just stomping on the flag of what I consider to be a great steakhouse's rep. Shame.

Bender, I'm keeping that in the memory bank the next time a celebration steakhouse-type dinner comes up in this area, thanks GB.

 
Ordered a porterhouse medium w/pink center @ Capital Grill over the weekend. Came to me charred, tips gray with thickest parts of strip part and tenderloin part pink as ordered in center.

Didn't send back and was still good overall, but was kind of disappointed since I've had porterhouse at Capital Grill before and it was nothing short of excellent.

Didn't want to be "that guy" sending it back. Feel like it was the right play, just might pick another restaurant for a nice once-in-a-while pricey steak.
The one in KOP? I've only been there once but was not impressed. Not saying it's not good, but just didn't have a good experience there. First, our reservation was for like 7 and we got sat around 8:30. Not a big deal, we drank in the bar and time went by quick. I ordered my steak medium. When I got my steak, I cut into it and it was barely rare. I'm not sure if it saw a flame for longer than 20 seconds. Normally, I just eat food and don't say anything, but it was way too rare.

I told the waitress and she said, "Actually, rare is going to be pink throughout." Still being very nice, not wanting to cause a scene, I said, "I get that. But this thing is raw." She took the steak back and I got to watch everyone else eat as I waited on mine. When it came back out it was almost well done. Apparently the cook wasn't happy with me sending it back. She asked how it was and I said, "It's over cooked, but that's fine." I ate it because I didn't want to wait anymore.

A manager came by later and asked how everything was. I told her what happened and she said something like, "Oh. I'm sorry things didn't turn out for you."

I ate there once for an anniversary dinner and I agree. The food was outstanding. My only complaint (and it's not even really a complaint) was the amount of noise in that place. It was so loud with people, I thought I was in a busy train station. It was around Christmas and there were lots of small business parties going on. So maybe we just were there at a bad night.

When I lived in Houston, we used to go to Kirby's in The Woodlands all of the time. My favorite steak place anywhere, hands down. That place has more of a quiet, fine dinning atmosphere.

That said, Sullivan's was still pretty awesome.
Agreed

It's the go to place for business meetings in the area. I bring clients to lunch there every Tuesday, but they are rowdy and like to have a few beers. Not as romantic as your other spots.

 
I've actually been to the Sullivan's you're talking about, a few years back, with my brother in law who lives not too far away. Sean McDermott was the Eagles' DC at the time and was at the table next to us. Really good meal, comparable to the NYC steakhouses in a similar price range.

 
I don't eat steak at restaurants very often, but if I order a medium, and it's a little on either side of that temp, I'll eat it without complaining. If I ordered medium and got rare, then I'd have an issue.

 
As mentioned there are a lot of variables. If I'm dumb enough to order a steak at a place not known for it, especially a general family restaurant, I deserve what I get.

At a decent restaurant or good one but not a statehouse, I'll order rare and up to a true medium rare I can love with. Once it's close to medium just too dry.

If it's a steakhouse and I'm paying 50-75 bucks it best be damn near perfect and I would expect the restaurant to feel the same.

Hamburgers I'll give a little more leeway as long as it's tasty and juicy

 
I have worked in restaurants for a lot of years, this whole "cooks doing terrible things to food" thing is way, way overblown. Especially at a nice steak house.

I worked for 18 months in an Applebees in college town about 15 years ago as an expo/cook, and even there this is something that I've literally NEVER seen happen.

 
There are some variables at play.

If I am at all in a rush or in a group where I would not want people waiting for me to finish, I don't send it back.

If I am at a place not known/advertised for steak, I don't send it back.

If I am at a place where I have the slightest distrust of the staff, I don't send it back.

If it is undercooked (rare), I don't send it back. I likely would let it sit for a few minutes and then eat.

If it is medium, I don't send it back.

Only if none of the above apply will I send it back.
