I've started ordering rare since medium rare seems to end up closer to medium at a lot of places.
At a better restaurant but maybe not a top steal house, you may want I order rare plus so they know you want it more on the medium rare side

 
Can someone explain the "eat it but tell the waitress" angle? I can kind of see it if you're looking to get the meal comped, but at that point I feel like you should have to give them another chance to get it right.

I ask because my mom always used to do this and it would drive me nuts. Little passive aggressive comments about the meat being pink (she always ordered well done), saying stuff like "I thought you guys were better than this..." Just unbearable at times.

When you are at a restaurant, you want to eat together. It is rude to make all the other people wait because you were picky about your food.

When you are at a restaurant, you want to eat together. It is rude to make all the other people wait because you were picky about your food.
Why would they have to wait? And it takes all two minutes to finish ruining a perfectly good steak if somebody insists on doing that.

 
I usually go medium or medium rare (depending on the steak).

If it is still rare, I'll send it back since it doesn't take much to cook it a little longer. If it is overcooked (this basically never happens) I'll just eat it and maybe say something to the waiter/waitress if its really bad.
same as what i do. at cheaper places i go medium rare cause i know they gonna overcook it, so hope for medium at worst. if i order medium it's probably gonna be jerky. if i'm at a high end steak joint and this happens, most of the time i'd send it back if I feel it's extreme either direction.

Sometimes it's an issue of time or lack of Patience or wanting to eat with everyone and not make them wait. But any good restaurant wants to know when they missed the mark and same with wait staff as when the kitchen screws up it's reflected in their tip.

In addition, if you know the staff or owner you don't want to let them know but not cost them food.

 
If it's an Outback/Bugaboo/Firebirds....place like that...I'm eating it unless it's a piece of charcoal well done. To me, enjoying the meal together with the people I'm with is more important than anything except the most horrible of situations. Hate to be that person that's either A) making everyone else wait to eat while they're fixing a small issue or B) wolfing down my meal while everyone else is done. I don't really fish for comped deserts or % knocked off the bill....so I don't even really tell the waitstaff

If it's a high end place... they need to be a bit more accurate.......

Good point here. OP sez its a $25 steak, soooooo kinda in-between.

 
I will only order steak at a steakhouse, so my expectations are higher. I do medium rare, so as long as their miss is rare or medium we are good.

If you're ordering steak at a chain you're asking for problems. Next time, just get the burger.

 
I guess I can't relate to the problem being experienced here.

Rare steak: good.

Medium rare steak: good

Medium steak: good

Medium well steak: good

Well done steak: good

As long as it's not burnt, I like it.

 
Went to a snazzy steakhouse in SF a long time ago with friends and ordered the steak medium-well and was brought rare. It's possible that the order was messed up, but I kind of believe that the chef was making a point that this is how steak should be served. I did not complain and ate it. Best steak I ever tasted.

I was not instructed to do that at the place I worked

 
I only go to a few places around town to get steak and they all do it. Same on the last few vacations too.

I'm sure the chains don't though.

You shouldn't cut their steak. That is weird. Trust me, no matter what this other guy says. We are friends after all.

 
I didn't say the server cuts the steak. The server asks the patron to cut it before walking away. If there is a problem with how it is cooked remedy the problem immediately. Same as when they offer your date to sample the wine when you buy a bottle before pouring both of you a glass.

At Peter Luger, best steak I've ever had and generally consistently so, they slice a porterhouse for 2-4 people and out it on your plate (with a fork and spoon, the spoon then used for a couple scoops of bloodfully tasty jus).

If I'm getting a single full cut, then there are ways by look and slight touch to measure how well done, but with steak it wouldn't normally be that visible so I wouldn't generally hold it against the waiter.

However, it doesn't help the overall experience, being 100% honest.

That's new to me.
I've had this done at old school, traditional, it's like the 60s (ideally in a good, velvety way) places and some "fancy" places that weren't really steakhouses.

At most higher end restaurants this is not the case any longer. And not for 20 or so years. If not longer.

Waiter has nothing to do with the cook on your steak. Nobody should be cutting it for you (unless it's like a skirt steak or something similar). Also, a lingering waiter is odd.

A chef should actually do that to make sure... If it's necessary. Which, granted, it should be.

put steak dishes down first. Ask if they will cut into it while passing the others around. Confirm it's cooked once everyone has what they need, ask if anyone needs anything else, walk away. Not awkward.

Other than a visual inspection ( which, by a guy whose served some of the worlds best steaks for 20 years actually can determine a decent amount), a waiter should never "cut into" your steak.

But at what is widely considered NYs ( and by many, the country's) best steak, they slice it for you at the table. I'm sure they'd let you do it, but the plate is literally sizzling at like 500+ degrees and it's a big ### chunk of heavenly meat.

This is how I would have felt as a server. Maybe the guy doesnt want to cut his steak right away.

Maybe henis mid conversation when I bring the food and dont want to interrupt him.

Maybe he doesnt cut it and uses his hands.

Too many variables. Leave the food and just go

That's new to me.
There's no rule. Every place that does steak, REALLY does steak, has a formula for checking temp, which is going to be 98% of any steak problems. Lot of places, more formal, will politely ask the guest to check the temp. Lot of places, server is instructed to return soon, and check on temp.

Sending back a steak, if you ask for mid rare, and mid well, I think you're painted in a corner. No one can really blame you for that.

Gotta kind of weigh the situation. If I want mid rare, and medium, I'm probably still gonna like it. If I am at a dinner with a group, I am not interested in the group eating uncomfortably while I wait for a steak.

I don't believe so. Pretty sure this has happened in nice steak places to me outside of NY.
I believe you because you seem like the kind of guy that would also go to high end steak places. I just don't ever recall this happening.

Sometimes they cut it for you. Sometimes they say, "ok, now I'd like you all to take a cut through the center to ensure that it's cooked to your liking."

And then you cut.

And then hopefully you don't have a baby in your group who complains that the fancy steak they are eating isn't perfectly fancy enough to their liking.

Who goes out to eat steak, I can make it better at home on the grill then any cook
you may grill it well but what goes into the prep work of a fine cut of meat at a steakhouse you're not doing at home. That's what I'm paying for when I go get steak.
