Your Super Bowl Menu (1 Viewer)

Damn its been a bit of prep work.  My wife wanted me to add red bean and potato scrapple to the menu. He mom is an Okie and grew up with the stuff.  That meant soaking beans overnight and a whole lot of extra chopping today, fat back, potatoes, red onions, yellow onions, shallots, garlic, red, green, yellow and jalapeno peppers.  The lollipopping of the chicken is sort of a pain in the butt as well. and making three kinds of meatballs is a bit of a pain.  There was a #### ton of skewering too.  Right now the smoker is happily humming alone and I am thinking of starting to drink. 

 
We are staying home this year, sick kid and all. Making our own subs, have roast beef, Turkey, salami, pepperoni, lettuce, tomato, onions, Colby or swiss cheese and Italian bread. 7 layer bean dip, chips, salsa and ice cream for desert. Go Pats.

Cajun Chicken Pasta from The Pioneer Woman (homemade) with some Andouille Sausage thrown in. 

Beer from a variety of different brewers

Don't care who wins as long as I win a square.

Sure you could. That's how I made them for years. I decided to kick it up a notch with the nuts. 
I made half of my pig candy with pistachios and half without. I thought they both were good, but seemed that people were weirded out by the pistachios a bit as they took much longer to disappear.

 
Late to this thread, and probably not the first in this thread to say this, but I made the Lazy Man's Pulled Pork from the crockpot thread. Also took our first shot at Old Fashioneds. Both came out great. Full disclosure though, we didn't watch the game. But it was a good excuse for the menu.

2019 menu.  nO theme here, just whatever I am in the mood to make.

meatloaf sliders.  I make an awesome meatloaf, and the sandwiches all week are even better, so I thought I'd sliderize em.

queso dip with tortilla chips.   my own created recipe to try to mimic Chili's queso skillet

homemade bacon dip and chips.  modified from grandma's recipe

lumpia.  Filipino pork appetizer, like a taquito, but much better. 

pork and chicken skewers.  these are marinated in some peanut butter type sauce.  so damn good.  My sister-in-law makes them.

pancit.  Filipino noodles

oatmeal chocolate chip cookies

maybe some chicken wings.  haven't decided if we need it.  We always have way too much food.

 
I've done some pretty elaborate dishes for the super bowl and miss part of the game and fun commercials. Not this year. I'll do mostly stuff I can either prep beforehand or pull out of the fridge.

Sub in brisket for pulled pork and different themed cupcakes and this is pretty much the same. Excited. Love super bowl Sunday. 

Edit: wife just told me the cupcakes are orange curd for LA and pecan pie for Georgia. Said she is done making Boston themed cupcakes for this game so she’s going to the host city when they make it. 

2nd edit: so cocaine cupcakes for Miami next year if the pats make it again, I guess.

Serious question, and welcome anyone's input. I've been requested to bring my buffalo chicken dip (it's layered) to an SB party.  99% of the time, I've smoked chicken thighs for it. A  number of recipes call for canned chicken and many use rotisserie chicken.

What do you think of using cooked chicken tenders for the dip?  I can't imagine the texture breaking down during the heating process. @Joe 8ryant?

 
Picking either NE or LA meant going with homemade NE clam chowder, sourdough, and shrimp cocktail.

Better than cheering for the Rams and having flatbread pizza.

Its very easy. 

2 8oz blocks cream cheese

1 16oz tub sour cream

1/2 to 1 pound bacon depending on how much you want in there

milk to make it creamy

cut bacon into bacon bit size pieces. (I find freezing it for 30 to 45 minutes before cutting helps make it easier to cut into small pieces) Fry up to desired crispness.  Drain grease, set aside.

Allow cream cheese to sit out to soften.  If you have a stand mixer, this step is a lot easier. Mix the cream cheese and the sour cream adding milk until the mix is creamy.  You will want to add a little more milk than you might think because it will stiffen after you chill. If you use too little milk, it will break all your chips. So make it creamy as you want. Dip will still look a little lumpy.  Stir in the bacon. Chill. 

Make sure you use ridged chips or kettle cooked. Regular chips will break apart.  Its also good with celery or broccoli which is mostly ok for the keto crowd.  

As a variation, you could add a packet of ranch powder. You can also just use one block of cream cheese which would make it easier to stay creamy, more like a sour cream dip.  Also you can add onion powder or anything else you might want to try to vary the flavor. I personally just like the bacon.

Nice thanks.  I was going to say it sounds like ranch but with bacon.  I'm gonna try this.  

 
Go to:

2 rolls of hot breakfast sausage 

2 cans rotel drained

2 bricks cream cheese

Cook sausage, combine everything in a small crock pot you can plug in there, and bring tortilla chips. 
I'm making this, but got 2 lbs of fresh chorizo at the local carneceria.  Smoking that on the Traeger and going from there.  Will serve with Fritos scoops and Hint of Jalapeno Tostitos.  Taking to a friend's for his party.

I make a bunch of appetizers. 

Stuffed mushrooms - just mushrooms with sausage and cream cheese.  Very good

Grilled shrimp - Put shrimp on skewers.  Baste with oil, oregano, paprika, and rosemary.  Grill for 4-6 minutes

Captain Rodneys cheese dip - 1/2 cup mayo, 8 ounces cream cheese, 1 cup grated Cheddar cheese, crumbled bacon, 1 cup Capt Rodneys glaze over the top.  Serve with crackers

You could get St. Louis style pizza delivered to your old house.

 
I found a recipe for barbacoa beef using the instant pot.

There are some strange populations of people around this country, if there is any accuracy to this. 
Fake.  Oregon is not banana bread.  And I think most Texans would shoot someone who suggested their favorite Super Bowl food was some girlie spinach dip.
