They already did this in the '80's. I didn't realize it's making a comeback.
 
Love this. Still pretty localized.

Grew up eating it and my family would grow it in their gardens (mom still does).

Started popping up here in TN several years ago and when I buy it...the clerks at Kroger never know what the hell it is.

Love it raw, little dash of salt. Or chopped up on a salad to add a little crunch.

Yeah, pickle juice, kimchi, sauerkraut juice are all the probiotic rage, too.

My vote? Beets. Good old fashioned beets are coming back in vogue. Good for your liver and overall health.

I'm going to go with aloe. Not because of any particular properties of the plant itself, but because "aloe" sounds like something a hipster would name their daughter, which I think is the important part.

My MIL has been pounding pickle juice to combat night-time cramping for a decade now.

 
If you don't like beets then you're eating them wrong.

Please help. How do you eat them? I belong to a CSA and we get them once a month or so. Ive tried boiling them and they taste exactly like the nasty ones in a can. I actually dont mind them roasted and chopped into little tiny pieces and added to other roasted veggies, but too many and they take over the whole dish. I made a Moraccan Beet salad one time that wasn't too bad the first time I had it, but the next time I made it, I couldnt stomach it.

Beets and turnips are pretty much the only things we get that I really dont like.

 
Beets are easy: wash, wrap in foil with a little salt, pepper and olive oil. Roast until they soften, maybe 30 minutes depending on size. Let cool and then the outer skin should peel away pretty easily. I eat them straight like that but with goat cheese and balsamic they are even better. They keep well, too, so roast more than you need and refrigerate the rest. A great, healthy snack. The purple will stain your fingers, though, which is the worst part. Oh and don't be alarmed if your poop turns a little red.

Ive had them roasted. :X Pretty sure I just dont like the taste. They're not really like any other food. Very "earthy" and almost impossible to hide in a dish (unlike Kale which is also nasty when eaten by itself, but can easily be hidden in things).

Last ones I got, I cut them into matchsticks and pickled them raw with lots of tabasco hoping it would drown the vile taste. Havent opened them yet.

 
Chia seeds are becoming very popular. They are considered a "superfood" because they have a ton of health benefits. I like em because they allow me to make superpoops.

Maybe ginger root
