Been eating two (dos) avocados a day for four (cuatro) months (1 Viewer)

I have a hard time finding ripe avocados. Do you buy fresh and let them soften up (as in buying ahead of time) or am I just in the wrong place for ripe avocados?
just put then in the window sill.
Here in Florida theres always a selection from rock hard/green to soft/black, so whenever I buy them Ill buy one or two that are ripe and a couple that will be ripe in a couple days. .
Good advise. I usually try to get one (uno) ripe one and two (dos) or three (tres) hard ones. The other key to good avacados is to move them to the fridge as soon as they start to get soft. If they sit on the counter for even a couple days when soft, they will get brown, but they'll stay nice and green in the fridge for a week or so.

I do it in the reverse order, but this might make more sense. I'll get a pack from Sams Club that are all rock hard. I think there are six (seis) or so in the bag. I'll put most of them in the fridge, but put out one (uno) or two (dos) on the counter to ripen. As soon as they are ripe, I'll pull another one (uno) or two (dos) out and repeat. I didn't know they kept so long in the fridge (refrigerador) once they were ripe.

Requires less planning to let them get ripe first. That way you can enjoy one (uno) whenever the mood strikes.

 
Made a shrimp salad with avocados the other day.

Just boil like 2 lbs of shrimp.

Slice 3 avacados in big chunks

Make a dressing out of olive oil, red wine vinegar, brown mustard, garlic powder salt and pepper

Very filling and very good. I didn't try eating it on a sammich, but I'll be it would be good that way, too...

 
I make avocado roll ups.

Half an avocado mashed up add - salt - chipotle tobasco - add diced tomato, onions and spread into a wheat tortilla wrap. LOVE THEM.

 
Made a egg & guac sandwich the other day. Spread quac over a large pita bread. Scrambled eggs and put in. Sprinkled with chipotle tobasco. It was excellent, but bacon would have made it even better.

Sprinkle some bacon salt into the eggs. Not as great as having bacon, but a little healthier and adds some nice flavor.

My parents never bought or ate them when I was a kid and I never liked the look of guacamole. And I must have hung with a non-guac crowd because no one ever recco'd it when out to eat. Always ate salsa with chips at mexican places. Forgot to stop last night, but putting a reminder in my phone now. Is avocado good for memory, because I could use that! lol

The Best Way To Keep Guacamole Green

Tips From the Kitchn

My husband is something of a guacamole connoisseur. When good avocados can be found in our decidedly non-tropical state, he scoops them up and works on perfecting his guacamole technique. So I've also spent some time trying to make his guacamole last. In the rare instances we don't polish off the bowl, it seems a terrible shame to waste an ounce of that good green stuff.

But my efforts to keep guacamole green and fresh overnight have always failed — until now. I've discovered a simple, foolproof, and easy way to keep guacamole green and delicious — and no, it doesn't involve avocado pits or extra lime juice. Want to see how I do it?
Guacamole is easy to make, but there are many reasons you might want to keep guacamole beyond its usual hourlong window of freshness. Maybe you made too much and want to save the leftovers, or you want to make a big batch ahead of time for a party.

I've seen many ideas for keeping guacamole fresh — Keep the avocado pit in the bowl! Press plastic wrap on top! Use more lime! — but none of them have ever worked for me. Invariably, the top of the guacamole turns brown, and I have to scrape at least an inch off to get to the good stuff below.

(There's a reason, by the way, that plastic wrap doesn't work well. In the past, plastic wrap was made out of materials that didn't allow air through. But the most common material now for plastic wrap is more porous and lets air pass through — oxidizing the guacamole and turning it brown.)

This method, on the other hand, works perfectly every time and doesn't involve plastic or extra lime juice. I like a precise balance of lime to avocado in my guac, and I don't want to drench the guacamole in juice to keep it fresh. This method is easy and cheap, and you can use it with any kind of guacamole. All you do is cover the guacamole with a thin layer of water.

OK, you say, this sounds weird — maybe even gross. Water on the guacamole? But water is a perfect barrier against oxygen, and since guacamole is dense, a little liquid won't water it down. I pour in a small amount of water to cover the top of the guacamole and refrigerate it for up to three days. After I take it out and pour off the water, I stir up the guacamole and the texture is no different than when it was made. In fact, I like the taste of guac after it has sat in the fridge overnight; I find the cilantro and onion flavors are blended better.

So here, step by step, is how I keep guacamole green. Have you ever tried this?

  1. Make your guacamole (we recommend Sara Kate's recipe). Put the guacamole in a bowl that has a tight-fitting lid. Pack the guacamole tightly in the bowl, pressing out any air bubbles.
  2. Dribble in some lukewarm water. I like to fill a measuring cup and pour it gently down the sides. Make sure the water covers the surface of the guacamole. I use about 1/2 inch of water.
  3. Put on the lid and refrigerate for up to 3 days.
  4. When ready to eat, take off the lid and and gently pour out the water.
  5. Stir up the guacamole to incorporate any extra moisture.

So my avocado tree has produced 10 good sized avocados. Anyone have any experience growing avocados? Anyone know when they are ready to pick?

:) Depends on you variety and climate, but you can probably pick them now. They have a long window for this so a common test is to pick one and give it a few days. If it softens up properly then pick the rest. If it doesn't soften, wrinkles up or softens irregularly, wait a month. 10 is a very young tree or something is wrong.

I (meaning a crew of Mexicans that work for a packing company) harvested 15 acres over the past 4 days. The grove is 90% Haas bordered by Bacon and Fuertes as a windbreak and for the thieves (apparently). The Bacons (huge but nasty eating) are contracted to a soap company and they harvest in December. The Haas are safe to pick late April through whenever, incredible hang time. Fuertes are a little later than Haas but we wait until they're ready to clean out the grove.

Where are you located? I want to try and grow one but skeptical if it will hold up in this climate.

Been eating one/day half w/scrambled eggs and siracha. Half with protein shake and banana post workout.

 
I've been using avacado as a mayo substitute for years. I just mash it up in a small glass container and then spread it on Ezekiel bread. It's great with tuna & chicken sandwiches.
