Definitely Raiders.

Also came to mind:

Mad Max Fury Road - Some people didn't care for this movie (they are wrong). Opening to this was just amazing.

Spy Who Loved Me (or whatever one ends with him skiing off the mountain)

Full Metal Jacket

Saving Private Ryan

A ton more I'm not thinking of.

Scream has a terrific  opening scene with peak Drew Barrymore.  Probably one of the best horror openers ever.

It goes without saying, but The Godfather.  Saving Private Ryan’s opening actually drains you putting you in a different frame of mind to watch the rest of the film.

Gravity in how they open the story in such a tranquil way and accelerate the story with an increasing velocity to that devastating meteor storm is jarring.

 
Cliffhanger 
I was driving from Durango to Vail one day and right by Redcliff on 24 I saw a bunch of vehicles, trucks and so forth on the side of the road in a pretty sketchy spot. I looked over and there was a guy down on the edge of a cliff and another above him reaching out to him. I didn't see a camera or anything that necessarily indicated a film was being shot other than the implications of all the vehicles there and such a tripped out thing going on. Friends confirmed that Sylvester Stallone was in Redcliff filming something. Still haven't seen the movie but I imagine it was a pretty pivotal scene.

It's probably in the top 25 movies that Stallone has done. 

 
Matrix. So badass.

Saw it first on the biggie, freshly released-- after the opening scene I was stunned, "this flick is groundbreaking!" 

 
One I just remembered is Star Trek VI. That amazing score and dramatic buildup to a massive explosion. Then we see a Sulu led Excelsior riding the explosion. Helluva way to start a movie.

Also there...

The ending of Easy Rider.

That scene with Brando in the taxi in On the Waterfront.  I could have been a contender.

Bogard.....all the gin joints in the world and she has to walk into mine.

When the King of the natives is calling for  King Kong as they bang the gong, and we hear Kong  crashing thru the trees.

The Lone Ranger (the original)...HI HO SILVER!

Like sands thru an hour glass so our the days of our lives.

And a bunch of similiar stuff..

You realize that most of these are not the openings of those movies, right?
