I also like it when I add the big bunches of kale to my West African peanut stew and I watch it shrink down in the heat immediately. Makes me feel like a mad scientist and in fact, I think I've even said "MOOOOO HAAAAA HAAAA HAAAAA" when it happens.
I serve it over rice. My wife is a vegan and makes a ton of tofu, so this is something I like to make that we both really enjoy absent tofu. Trader Joes makes a terrific natural peanut butter that's ideal for this recipe. I've made it a ton of times now - I follow this recipe. She's got some really good stuff for the plant based folks. Lots of flavor!
Small world - the woman who runs that site and wrote the recipe spoke at a conference I attended last week in Boise. She's outstanding. Her cookbook was nominated for a James Beard award.
No kidding? Ha! I've used a few of her recipes as I attempt to find vegan recipes I'll enjoy making as much as I enjoy eating. I love all the spices she uses along with her layered approach to cooking her dishes. Very cool you got to hear her speak.
