You guys are nuts. Kale is delicious. I put it on my pizzas. So good. Kale salad, kale chips...
sautéed with spinach and garlic, or air fried is best
and dried cranberries

YEAH! Those go into the kale salad my wife makes and I'm a fan!

I also like it when I add the big bunches of kale to my West African peanut stew and I watch it shrink down in the heat immediately. Makes me feel like a mad scientist and in fact, I think I've even said "MOOOOO HAAAAA HAAAA HAAAAA" when it happens.
mmm, Liberian peanut soup. My ex is from there and her cooking along with the general cuisine of the country is exquisite. Do you make fufu with that or do you eat it with rice?

I serve it over rice. My wife is a vegan and makes a ton of tofu, so this is something I like to make that we both really enjoy absent tofu. Trader Joes makes a terrific natural peanut butter that's ideal for this recipe. I've made it a ton of times now - I follow this recipe. She's got some really good stuff for the plant based folks. Lots of flavor!

Small world - the woman who runs that site and wrote the recipe spoke at a conference I attended last week in Boise. She's outstanding. Her cookbook was nominated for a James Beard award.

No kidding? Ha! I've used a few of her recipes as I attempt to find vegan recipes I'll enjoy making as much as I enjoy eating. I love all the spices she uses along with her layered approach to cooking her dishes. Very cool you got to hear her speak.

She was good. She uses the same email software we do, (kit.com) and was speaking at the Kit Conference. https://kit.com/conference Her talk was about building an audience and creating content. She's super talented.

Well.....she was able to reach this red-meat loving, chicken-wing smashing Texas boy with her plant based recipes so she's doing something right!

But honestly, it's her recipes themselves that she puts out there. They're top shelf and she makes the cooking process simple by breaking it down in easy to follow steps. Big fan.

Sitting in Chicago Midway, departure has been pushed back 2 hours. Good times.

Hey, at least there are a TON of food and drink options with open seating and friendly people to help you pass the time!!!

**** that airport in the fart box. Chicago should be ashamed of itself for that hell hole. Such a wonderful city for food and drink and yet Midway is a middle school cafeteria with French Laundry pricing.

My stomach started acting up yesterday so I haven’t looked into food options. This would be a good time to go to a bar but that would be a bad idea for my digestive system.

There is a White Sox themed bar, an Irish themed bar and the worst pizza place I've ever purchased food from. Nobody who works there wants you there and there are no seats available. When you get back to your gate frustrated and hungry, enjoy sitting on the floor because the 13 seats that are open for 5 gates in a round circle are occupied by people with rashes.


Worst airport in the country. Bar none.

My co-worker went to the White Sox bar. I have a seat at my gate but who knows if it’s the actual gate we will take off from. It’s already been changed once since we got here.

going to a place full of Christians? They are nice people, but. ........Eternity? I don't have the chops to pull it off.

Haven't flown through Midway since right after 9/11. It was the best option for a layover between Portland and Tampa. I don't have high expectations, but happy not be changing planes at O'Hare

I'm sorry the people who say they're Christians you've encountered have done such a poor job to make you feel that way. It's a challenge and something I to do better with. And fail there often.
 
Chicago O'Hare is the only place I've seen in the 21st century with a waiting list for Chillis 2.

Unreal that a city that spectacular fails so hard on their airports.
It's the mob, probably. Midway used to have great local restaurants inside. Manny's deli, and a few others. But once they did the construction project they brought in a bunch of no name generic restaurants.

As Hawk's mentioned O'hare does have at least one Rick Bayless spot.

Midway is 100x better for transferring through.

Still amazed at how amazing the PDX airport is every time I fly in and out. I love it.

Unfortunately, too many Christians (and many other religious folks) use their religion as a get out of jail free card for being an ******* here on earth.

I think Iceberg lettuce is meh.
You need to try a wedge salad
Wedge salads are stupid, it’s just a harder to eat version of a regular salad

Similar to how a tostada is for people who like tacos but want them to be more difficult to eat
Since its grilling season, try grilling the wedge (can be iceberg lettuce, cabbage, napa cabbage, bok choy) with a nice vinegrette. Even GM's new BFF agrees: https://rainbowplantlife.com/the-complete-guide-to-vegan-grilling/

We've managed to keep this thread free of religion and politics for a decade. Let's keep it that way, huh? TIA.

We've moved on to vegetables, fruits and horrid airports.
Speaking of which, my plane took off more than 2 hours late, landed just after 2:30 AM Eastern and I didn't get home til almost 4 because Uber takes forever to arrive at that time of night.

Why did the plane not show up until 2 hours after it was supposed to? Because when landing at its previous destination, it hit a bird, which triggered all kinds of inspections.

Tough weekend in Minnesota got even tougher late Saturday night, as an acquaintance of my son died in a car accident. 19 years old. Like my son, he was adopted from Guatemala. I coached the kid in little league baseball, the whole bit. Knew the family pretty well. They lived right around the corner from us.

Just awful. Rumors are they were racing or some nonsense. Kids that age are dumb, just like we all were. So gut-wrenching to have it cost him his life. Can't imagine the parents.

Funeral is going to be just brutal obviously.

They can be gone in a blink.
The wake was tonight. Truly awful.

Was so hard seeing all these 18-, 19- and 20-year-old kids there. No one that age should have to see their friend buried.

The mom and dad were holding it together pretty well. Mom just kept saying to us, "This isn't real. It can't be."

What do you say to that?

On a personal level, there aren't very many families out there that look like mine, but theirs is one of them. White mom and dad with a boy from Guatemala as their only child. It was impossible to hold it together while watching the slide show of photos on a loop.

We have all the exact same photos and unique experiences with our son that few others can understand. It was like an out-of-body experience.

It was impossible to not see our son in every single photo. And, of course, he actually was in some of the photos too. So were my wife and I.

How do the parents move forward?

Oh, buddy, I am so so sorry. I can't imagine the heartbreak this is for all of you. Your words here are some of the most touching, poignant and gut wrenching as I've ever read on this board before. Thanks for sharing, as sad and hard as it had to be. Hugs to you, your family and all the people who loved this child lost to soon.
