McClure's BBQ (1 Viewer)

No pics yet...its still a shell with no walls inside. Electrical done...HVAC done...plumbing started today. Started ordering all the equipment. Already booking parties for the upcoming year after we open. I have approx 10 catering orders already lined up..unheard of for a new place...the pop up concept really paying off. I start playing with new food this week. I gotta learn how to do beef ribs correctly. And lamb, and a sausage recipe. Also tweaking a couple of the recipes and sauces. :banned:
Congrats on the progress GB. It might not be moving as quick as you wish, but considering how quickly/smoothly things have fallen into place overall I have to say you're still sittin pretty. Can't wait to sample the goods this winter/spring once you open up.
 
New Years update Was just thinking about it
me too.... (this thread anyway) as I needed a place to complain a little.Run into a permitting problem with the city. The city wants me to lease 7 parking spaces near my restaurant, but they just don't exist in the area required, which means I have to file for a variance which will take at least another month to get done. :wall: FYI...nobody has parking on Magazine street. Yet it has more businesses than any street in the city. :wall: And...the build out itself...I have no idea why it takes 2 weeks to dig a 4 foot hole even with the holidays factored in. This pace is killing me. :wall:
 
I don't understand the space lease. How much is it per spot. Would you have one of those signs that say parking for McClures only? How would you enforce that. Seems ridiculous to force business owners to do that. Do other businesses on the street have to do the same thing?

Their next schedule meeting is in the middle of next month, which means I am not going to be open January or February. March is more realistic now.

My level of stress just went through the roof. I really didn't want to miss Mardi Gras sales. Oh well...got keep trudging.

BTW...this is my fault. I should have gotten this kind of information months ago before I signed a lease.

:( Sorry for the headaches GB. Could you just set up the smoker and sell out on the street as a "popup" type street vendor in a pinch? I mean, if you "own" the property I would think you could cook out back and sell out front. NOLA is one of the cities that would seem to me to be willing to jump on something like this. In a pinch, of course.

Surely you have to know someone in the city that can help you get a temporary waiver or a license for Mardi gras.

yep....got the grease trap in the ground under the kitchen area. Now we just need to plumb all the lines to it (which should be easy since getting it in there required removing the entire floor) and we are essentially ready to close walls and start making it a restaurant. The hood is the next and last huge project i think.We could totally be open by Mardi Gras if I had know I was going to need this parking variance. :wall:

just came online to note that i was making your chili as i type....cannot wait to make it again with my smoked brisket bits. early march feels like a pipe dream. get a group together...ill cook for yall in the park or something :)

I already have the 84 deluxe on wheels. Looking at the 108" for the restaurant. Actually starting to look around at other types...kind of looking for one that is more upright, but still a stick burner.

So a verticle chamber but still with a firebox? I assume the warmer is not a concern for you then as that tends to be the verticle component in most rigs.

Have many connections. Hasn't helped other than giving me good info. Even letting one of the city attorneys beat me at the school bbq cookoff didn't help :mellow:

IMO Vert is where it's at...esp when looking for high capacity in a small footprint. Your 84 is already a hoss... getting a 108 too will quickly take over any available space you had in the "yard". If you are looking to build custom, I have connections with one of the top fabricators in the Southeastern US. Guy has dozens of auto magazine covers featuring his builds. I'm sure he'd be willing to quote ya on a rolling vert of your design... plus he's got laser and CNC beds so he can cut some pretty cool cosmetic features into it...pretty much anything you can imagine.

I have my meeting with the City Planning Commission today for the public hearing about my request for a waiver for 2 parking spaces required by the city zoning ordinance. I have been waiting for this meeting since we halted construction and made the application with the city back in the beginning of January (they only meet once a month). I got a call from the guy working my case on Friday afternoon reminding me about the meeting and also giving me a heads up on two things. 1. In the email he was sending me was the recommendation the staff was making to the board to indeed approve my requested variance. But... 2. They were also recommending deferral of the approval until the next meeting because one of the condo owners near me had not been contacted about the hearing. Which means I have to wait until mid March now to get approval. :wall: :wall: :wall: :wall: :wall: :wall: :wall:

Go knock on that condo owners door before the meeting and have him sign something to the effect that he's fine with it. Offer free BBQ if he resists.

Unreal... gotta love BS red tape. These ####ers can't find time to knock on a door or meet more than once a month so they keep a man from earning a living for another 30 days. :no:

The letters were sent out by the City Planning Commission. I provided them the addresses as part of my application. I did not have the correct number of addresses from one property split into several condos..the info I got straight from the city website no less..and the same addresses they would have to send out for any zoning issues on the block. :rolleyes:
