McClure's BBQ (3 Viewers)

Hey GB.... How long after you get clearance before you can open? We are actually trying to plan a weekend down there this spring and are sorta planning it party around your new spot :)

 
My evening may have just freed up here - Should I try for McClure's or Dante's and how do I ask for Mr. McStagger?

 
Finally got approval from the BZA (zoning) and am allowed to open a restaurant in the location I have been leasing now since October!!!

Construction resumes immediately. I'm not estimating when I will open, but it at least is back on track.

Tipsy - keeping fingers crossed for JF - would love to stop by and chat once again. Keep me updated as you get closer to JF - I can put a word in over on the jazzfest chat board as well.

oy....i forgot about this.

I have to pay the city of NOLA $100 a year so I can pay someone other than the city of nola to pick up my garbage.

And...I'm not allowed to use the city of new orleans as my garbage collector, even though they pick up the same sized cans with different paint at every single residence in the city.

I'm never living here again if I ever leave.

Not a fan of Fat Max or Fox Brothers? Or are you comparing to Texas bbq or something? I thought both did a better than average job compared to most of my bbq travels.btw...Atlanta (or probably a bit outside the perimeter) is always a candidate....i am a big Braves fan and would buy season tix to the falcons just to boo them constantly.

Jazzfest is happening. My fingers are crossed that I can get some good Q while I am there.
 
Memphis franchise was open for business last weekend.
Lol Sadly we couldn't cook tipsys recipe on his smoker so I'm not sure he'd claim the product we put out, however we did have a damn good time :) Word is he finally has permits in hand and an optimistic open date in July-ish barring any setbacks (nojynx). Looks like liquor license will have to wait till open due to more NOLA red tape. Bottom line: finally some progress! :banned:
 
Progress indeed. 6 month battle with city hall is over for the moment and construction has begun again. The contractor says he will be done in 3 weeks ....which probably means 6 weeks i'm guessing :)

Today was the first time I went by the restaurant since december and saw work being done. It feels awesome!!!

 
Moving quickly. Sub floors & hardy board all in place...closed wall inspections today...bead board (faux) in place along wall in dining room...concrete poured around bathroom fixtures and sidewalk that was broken up....

and right on cue....running out of funding. the delay we had is killing my opening budget. Anybody know a loan shark?

Ugh... :( Partner not willing to pony up a bit more or will he demand more equity?

 
he will...but his cash flow is tight with this delay and he would like more equity out of it. I'm trying not to let that happen....will beg borrow and steal from friends and family if I can. Trying to apply for a biz loan from the bank...but didn't have very good luck with that just a few months back.

I'll open with ice chests if I have too. :football:

Floating an idea here, no idea if it is really feasible or probable to pull off. What if a bunch of FBGs got together to donate and you set up a "VIP" table for them at McClure's. Any time one of the donating FBGs is in town they get the table and a free dinner (tip not included of course). Probably would need to be a minimum donation amount, etc.

I live here, so I wouldn't expect a free meal every time, but I would donate because I like Tipsy and think his idea is a really good one. Not sure you could get to $25,000, however.

I was in for 1,000 but I just bought a condo and I'm not sure i can swing that much. But if it gets going, I'll see what I can do. Don't need any equity in it.

A Kickstarter would be great, just have to come up with ideas based on the amount donated. 100 gets you a t-shirt, sauce and a 4 punch free dinner/lunch card type thing.

Probably right. I'm in D.C. so I would almost never be there, but it could get abused by people that live closer.

 
not sure about the kickstarter idea....i need to research it more. I appreciate the support guys...I don't think a fundraiser in the ffa is the way to go at the moment.

It wasn't so much the muddledness of it but the fact that Tipsy had the good fortune of linking up with his investor, which was INFINITELY easier. As to the task at hand, you need to get open and selling something. That solves all the problems. Yup, sell beer out of Ice Chests and serve on paper plates. BBQ is one of the few (the only?) food types where you can get away with such a thing and people won't care. Get the floor laid down and open the doors - you have to get money coming in. Do that for 90 days and show a positive P/L and the bank will help you quickly.

 
passed the inspection yesterday and can proceed with closing things up ...and tile work in the bathroom & kitchen has already begun.

kind of blown away by the speed this is going now.

Yep... that is the true beauty of BBQ. The more stripped down, bare bones your operation is... the more "cred" you get for being authentic. It's not about the presentation... not about the fancy decor... IWith BBQ it really is all about the flavor of the food. In that respect BBQ is one of the more "pure" styles of cuisine. Hand me a hunk of smoked meat on wax paper with a cheap white roll and a cold beer and I'm in heaven.

This. What permits do you still need before you can sell food and drink? That should be all you're worried about right now. People will buy food even with construction going on around them. Sell bbq sandwiches and street tacos on the street. Sell racks of ribs in front of the place like Rouse's does. Tell your pop-up fans that you're selling in front of that address every day for lunch and dinner. Whatever you have to do. You'll make it through, and whoever buys from you now will probably be a customer for life, bringing friends in and telling them how long they've been buying from you. "Since the owner was selling pulled pork on the front doorstep while they hung drywall in the building."

Lots of good BBQ in Atlanta....Heirloom Market, Fox Brothers, Daddy D'Z, Community Q, Big Shanty....
