Just finished off one of the best bowls of soup Ive ever had... and made it myself.

Amazing how simple these complex tasting thai soups are once you have the ingredients.

Step 1: The broth base:

8 kaffir lime leaves

2 red thai chilis, chopped

1.5 inch ginger, sliced

1 stalk lemongrass, cut in 3" pieces and slit down the middle (smash it with blunt side of knife to let out flavor)

5-7 cups chicken broth

Boil for 15 minutes, and strain.

Step 2: the final stage

mix of whatever veggies you like (I use mushroom and broccoli)

shredded chicken

---- cook above for 8 minutes in the broth ------

one can coconut milk

2 tablespoons fish sauce

1 teaspoon brown sugar

Heat thru and serve w lime and coriander.

What separates pedestrian asian soups from the truly great ones are the broth. If you ever have time to make your own from scratch you'll be blown away.

On weekends I always make my own broth and freeze it. Truly does make all the difference in the world.

I usually get my butcher to keep all the chicken bones he would discard when he does the boneless breasts.

Amaaaazing
