Why do bagel stores use so much cream cheese? (1 Viewer)

When they make you a bagel with cream cheese, why so much of it?

Does anyone actually enjoy eating fistfuls of cream cheese? Furthermore,  it isn’t very cost effective for a bagel store.

Even when you ask for just a schmear, still a mountain of the stuff.

 
Yeah im trying to figure out a way to ask for less.  I don’t want to say light cream cheese because then I might get that diet crap

 
lol I always thought the same thing. Everytime I buy bagels for home, I put the cream cheese on myself.

real nyers know, it's simply to justify the upcharge.  while cream cheese is expensive, bagels are not.  a bagel with cream cheese will likely cost 1-2$ more than a bagel dry.  if you pay 2.39, you feel like you got your money's worth.  sbux gives out  philly cream cheese cups with a bagel buy, for a reasonable upcharge.  i like the cup....let me schmear my own so i don't kvetch and act like a yenta in front of my shiksa wife.  oy gevult!

 
I picked up 2 bagels with cream cheese this morning for my kids, I removed the excess cream cheese and now have enough for about another 8-10 bagels.

Same with butter. At least 1/4 inch thick of butter if you don't specify. 

My oder: bagel with butter and strawberry jelly, lightly buttered on both sides.

 
Can't have enough cream cheese on my bagel.  I put that stuff on with a trowel.  I'm not a NYer though, so I know my opinion doesn't "count."

The other thing about getting too much cream cheese is that you can just throw some of it away. Too little cream cheese, OTOH, is not as easy to fix.

Funny in I've wondered the same thing too. It's pretty rare for a company to do something with their product that costs the company more and makes the customer like it less. 

 
My daughters friend managed a Panera and Einstein's.   I was asking this very question one day because Einstein put so much cream cheese on my bagel I had to wipe some off.    He said cream cheese in bulk is comparatively  very inexpensive and most people like it slathered.. the profit margin for 2 coffee and 2 bagels is so high and the actual food cost so low that they like to heap on the cream cheese so the customer is happy.  2 coffees and 2 bagels with cream cheese and you are pushing 10 dollars with a food cost of under one dollar for the store.  Same with donuts. That is a very high margin.

Places that are serving beef, bacon or other meats have nowhere near this low of food cost and high margins.

It has to be something like that. Companies like Einstein Bagels don't get that big being stupid. My guess is I'm wrong on two counts - it's not as expensive as I think and more people like it than I think. Basically what @Da Guru is saying.

And YES, on the other point. One thing I've learned as I've dug into the restaurant business a little is how wide the range is for restaurant profitability. Something like BBQ runs an extremely high food cost where something like Pizza can be half the food cost of what a BBQ spot deals with.

The friend I am talking about is now in the food service business.  The food costs for running a steakhouse, a BBQ joint can be very high. If a customer is unhappy with a bagel they toss it in the garbage you give them another, or if an employee burns the bagel same thing.   Burn a Rib-Eye, Filet or swordfish, over cook a lobster or have spoilage and the store is out a substantial amount.

Mexican restaurants usually have a lower food cost higher margin due to many of the ingredients can be intertwined with every meal.  Ground beef, lettuce, cheese, beans, chicken in various ways. And the cuts of beef are usually cheaper marinated skirt steak variety (Although still very good)

I was at the airport last week for a business trip. A guy sat across from me with a bagel topped with a fake egg circle thing, and then cream cheese was caked on top of that. It was disgusting.

I've yet to encounter a bagel with too much cream cheese. 

Heck, I might even try a little @shadyridr if he puts enough of it on himself.

All you whiners are going to end up getting your way, then I'll have to pay extra for "double-cream cheese."

 
I don't really do bagels and don't live in a bagel city, but my guess is that bagels are dirt cheap to make and they are charging you an arm and a leg for them so they figure they'll add value with a mountain of cream cheese. Similar to 5 Guys and the mountain of fries with your tiny burger that costs $9.

Yeah, most restaurants food costs run about 25% of menu rate. Pizza and pasta average much lower, like 15-17%, while BBQ's and meat-centric places can easily be 30-35%.

I love fried egg sandwiches and I love cream cheese - when I picture them together like that on a sandwich, I do get a little queasy.

I'd kill for 25%. I'd figure the only guys that get that are doing pizza or bagels. Or doughnuts. Or tiny burgers with a mountain of fries to justify the price.

oh, oh ...no.  nfw.  Raisins aren't my favorite but they go well with cinnamon and bread.  

One of the best grilled cheese sandwiches I ever had was:

Cinnamon-raisin bread with sharp cheddar and muenster cheese, very thick sliced bacon and a few ...very thin slices of green apple.  Amish place in Western PA.
