Anybody got a good enchilada recipe?
Absolutely, but I usually do Enchilada casserole because it's way easier.2 lbs of bone in chicken - just breasts or breasts and thighs. (use 1 lbs boneless breasts and or boneless thighs if you don't want to shred it and want to chop and fry instead)Put the chicken in a big pot and cover with chicken broth. Add a couple cans of diced chiles, some chopped up jalapeno, a couple of bay leafs, a shake or two of cumin, paprika, cayenne pepper. Bring to a boil, reduce heat and let it simmer covered for about an hour.Shortly before this is finished, saute up a chopped onion in some olive oil.Remove chicken from broth and shred it with a couple of forks. Give the skin to your animal, toss the bones.Drop the shredded chicken back in the broth and add the onions and let it hang for a couple minutes while you elt a brick of cream cheese (or two if you're feeling saucy) in a large pan or sauce pan. When it's melted run the chicken/onions/chiles through a collander or use a slotted spoon to pull everything out of the broth. Make sure you get rid of the bay leaves. Drop the drained chicken stuff in with the melted cheese and mix it up good.Pour a little enchilada sauce (I prefer green to red but whatever you like) in a large baking pan. Take some corn (important - corn) tortillas and tear them up and line the bottom of the dish. Add 1/2 your chicken mix, cover with a full small can of enchilada sauce (or half a big can) do another layer of torn up tortillas, the remaining 1/2 of chicken mix and the remaining enchilada sauce (whole small can or 1/2 big can). Cover with shredded cheese and bake at 375 for about 35 minutes.I have at times added rice and or beans or have served them on the side. If you want the faster/easier method just saute the chopped chicken with the chiles and onions and don't go the shredding route.If you want real enchiladas, it's much the same except when you get to the building of the casserole part of the above, you fry each individual corn tortilla in some oil for a few seconds on each side then drop it in a bowl of enchilada sauce to coat. You then put your chicken mixture on it, roll it up and put it in the pan. The casserole is way easier.

Finally filled out a bracket.

Miami over Louisville for the net-cutting-stuff.

Round of 8: a 1 over a 3 (MW), 2 over 8 (South), 2 over a 1 (East), 3 over 1 (West).

Biggest 1st round upset: Cal over UNLV (12 over 5), OU over SDSU (10 over 7).

Last night I made them with left over grilled chicken that I shredded by hand, added to some melted cream cheese and salsa, rolled up in tortillas, covered in sauce and shredded cheese, cooked for 20 minutes until cheese on top was melted. I skipped the ***Official*** steps of frying the tortillas, dipping them in sauce and then rolling them.

I sent Mrs. SLB to the wake of our GB's brother. It's in a pretty rough part of the city. She just called me. "I um, I'm here. I, uh, feel kind of out of place."

Amazing thing is I remember when it was a nice part of the city. My great aunts from my father's side lived only a couple of blocks from there, my great grandparents from my mother's side a couple of miles down the road. Weird how #### changes.
